Are elderflowers edible?
The flowers are edible. But, the leaves, branches, and unripe berries are toxic. Do not eat them. Use only the flowers if you will be adding flowers when you make this elderflower lemonade recipe. Or, you can use the syrup instead.

Which elderflowers should I use?
There are two different types of elders that I am aware of. The wild ones have white blossoms that are most commonly used. But, the black elderberry has pink blossoms. You can use either one. The pink blossoms may be more fragrant. But, both should work.
Or, just use the syrup. Elderflowers bloom only from April to June so you should keep the syrup on hand to use when they aren’t in season.
Can I use another sweetener?
This elderflower lemonade recipe uses honey as the sweetener. But, if you prefer, you can use stevia, agave, or even white sugar. You will have to experiment to find the correct amount of sweetener. Some people like their lemonade more or less sweet.
It’s important not to overheat the honey. If you do, you will reduce any of the health benefits of honey. For this reason, it’s best to use raw, local honey. You can often find it at local farmer’s markets. Or, you can get raw honey.
Can I add other flowers?
Lavender, lilac, and honeysuckle all make wonderful lemonade when they are in season. Experiment with the ones that you like the best. Are lilac flowers edible?
What does elderflower taste like?
As you’d imagine, it has a light floral taste. It’s not super strong. It’s a very delicate floral taste.
How long will this last?
Once you make this elderflower lemonade recipe, you can keep it in the refrigerator for up to three days.

- Small saucepan
- Lemon reamer
- Cutting board
- Spoon
Ingredients for elderflower lemonade
For a more sour lemonade add more lemons. For a sweeter lemonade add more elderflower syrup or more honey mixture.
- ½ cup of honey
- 1 cup of elderflower syrup or concentrate
- Juice from 6 large lemons
- 6 Cups of water
How to make this elderflower lemonade recipe
- Add honey to 1 cup of the water in a small saucepan.
- Heat gently over medium heat until honey is mixed well in the water and a simple honey syrup is created. Don’t overheat.
- Pour the syrup in a large pitcher.
- Add in the elderflower syrup and juice from the lemons
- Add in the remaining 5 cups of water and stir well.
- Stir in a generous amount of ice to the pitcher and serve.
