Equipment needed to make the best scrambled eggs
- Medium bowl
- Small skillet (nonstick skillet is easiest)
- Whisk or spatula
- Kosher salt and freshly cracked pepper
Should you put milk in scrambled eggs?
Does water make eggs fluffy? The classic scrambled eggs recipe uses milk, but I find that adding water makes them lighter and fluffier. Just make sure to use cold water so your eggs don’t start cooking as soon as it hits the pan.
If you want creamier eggs, then you should add milk, heavy cream, or even sour cream to make them extra creamy. This is how I make the best eggs.
What should I put in the egg mixture?
In my opinion, the secret to making great scrambled eggs is in the egg mixture.
I add a little bit of whole milk, heavy cream, or half-n-half. Then I add a pinch of kosher salt and black pepper.
Whisk it all together until the mixture is well combined. Add fresh chopped herbs at this time if you’ll be using them.
How to make scrambled eggs without milk
If you are looking for a dairy-free option, you can use water instead of milk. Just make sure to add a little bit of fat to the pan so your eggs don’t stick or dry out.
You could also use olive oil, coconut oil, or butter. For creamy scrambled eggs, be sure to add dairy of some sort.

The best cheese for the perfect scrambled eggs
I prefer to use shredded cheddar cheese in my eggs. You can use any type of cheese that you like. Just make sure to shred it yourself for the best results.
If you want to make Ina Garten scrambled eggs you can try goat cheese instead.
To make the best scrambled eggs, add the cheese at the end of the cooking time. I sprinkle it over the soft curds right before I serve them.
Remember to serve immediately.
Best herbs for scrambled eggs
I love adding fresh herbs to my eggs. I think it’s the best way to season scrambled eggs.
My favorites are chives, oregano, and basil. But you could also try rosemary, thyme, or sage when you make herbal scrambled eggs.
I add them at the same time I add salt and pepper.
What kind of pan should I use to make scrambled eggs?
I prefer using a nonstick pan for making scrambled eggs. You can use whatever type of pan you have on hand, but a non-stick skillet will help to prevent sticking and make cleanup a breeze.
What do I use to scramble eggs?
I like to use a rubber spatula to scramble my eggs. A silicone spatula will work as well and it’s easier to clean. You can also use a whisk if you prefer.

How to make scrambled eggs in a skillet
Once you have your pan heated, add a little butter. You can also use olive oil or cooking spray if you prefer.
Pour the egg mixture into the nonstick skillet. Use a rubber spatula to push the eggs around in the pan, making sure all of the uncooked eggs touch the skillet. Add black pepper and salt.
Cook the eggs until they are firm and no longer runny. This will take a few minutes.
I find it’s easiest to cook in a skillet over medium heat or even medium low heat. If you use a hot skillet, they may burn or cook unevenly.
How do you scramble eggs step by step?
1. Use fresh eggs if possible. If you can’t get farm fresh eggs, use the next best option.
2. Whip the eggs until the whites and yolks combine for a streak-free scramble.
3. Cook them on medium-low to low. You might even have to toggle back and forth to find just the right heat. But better too low than too high. High heat will make for dryer, tougher proteins and lower heat will make for a super soft custardy scramble. Know that, and adjust as you like it best.
4. Use butter for the eggs. You could use oil, but butter’s moisture helps keep these eggs luscious.
5. Use a rubber spatula to move the eggs around in the pan, folding them over on themselves until they’re cooked to your liking.
6. Don’t overdo it. Scrambled eggs are best when they’re soft and creamy, so take them off the heat while they’re still moist looking. They’ll continue to cook a bit after you remove them from the skillet.
If you’re wondering how to cook hard scrambled eggs, cook them a bit past this stage.
7. Add-ins are always welcome: think cheese, diced ham, crumbled bacon, sautéed veggies, fresh chives, or chopped herbs. But know that you don’t need any of those things to make great eggs.
How to make scrambled eggs in an Instant Pot
If you want to make scrambled eggs in an Instant Pot, the best way to do it is by using the “manual” or “pressure cook” function.
Simply add your eggs and desired amount of milk (I like to use 1/4 cup) to the pot and stir well. Then secure the lid and set the valve to “sealing.”
Cook on high pressure for 1 minute. Once the cook time is up, do a quick release of the pressure.
Stir in some shredded cheese (I like cheddar), salt and pepper to taste, and any other desired toppings (bacon, diced ham, sautéed veggies, etc.
The result is perfect eggs in just a minute or two.
How do I know when the scrambled eggs are done?
They are done when they are cooked to your desired level of doneness. I like mine on the softer side, so I take them off the heat when there are still a few wet pieces.
If you like your eggs firmer, cook them until they are dry throughout.
Serve eggs immediately.
What do I serve with fluffy scrambled eggs?
The possibilities are endless! They go great with toast, breakfast potatoes, bacon, ham, sausage, and fruit.
You can also add cheese, fresh chives, diced onions or peppers, and other herbs and spices to the eggs while they are cooking. Get creative and enjoy!
How can I make scrambled eggs a larger meal?
Start with your basic scrambled eggs recipe. There are lots of ways to serve eggs to feed a hungry crowd.
Try adding some diced ham, crumbled bacon, or shredded cheese to the eggs while they are cooking.
For a vegetarian option, add sautéed veggies like peppers, onions, and mushrooms to the eggs.
Serve the eggs with a side of breakfast potatoes or fresh fruit and you have a complete meal.
You can make an English muffin, toasted bagel, blueberry muffins, or your favorite homemade bread. Many people enjoy eggs with a side of sausage, ham, or bacon.
