How to make scrambled eggs in a skillet
Once you have your pan heated, add a little butter. You can also use olive oil or cooking spray if you prefer.
Pour the egg mixture into the nonstick skillet. Use a rubber spatula to push the eggs around in the pan, making sure all of the uncooked eggs touch the skillet. Add black pepper and salt.
Cook the eggs until they are firm and no longer runny. This will take a few minutes.
I find it’s easiest to cook in a skillet over medium heat or even medium low heat. If you use a hot skillet, they may burn or cook unevenly.

2. Whip the eggs until the whites and yolks combine for a streak-free scramble.
3. Cook them on medium-low to low. You might even have to toggle back and forth to find just the right heat. But better too low than too high. High heat will make for dryer, tougher proteins and lower heat will make for a super soft custardy scramble. Know that, and adjust as you like it best.
4. Use butter for the eggs. You could use oil, but butter’s moisture helps keep these eggs luscious.
5. Use a rubber spatula to move the eggs around in the pan, folding them over on themselves until they’re cooked to your liking.
6. Don’t overdo it. Scrambled eggs are best when they’re soft and creamy, so take them off the heat while they’re still moist looking. They’ll continue to cook a bit after you remove them from the skillet.

7. Add-ins are always welcome: think cheese, diced ham, crumbled bacon, sautéed veggies, fresh chives, or chopped herbs. But know that you don’t need any of those things to make great eggs.
How to make scrambled eggs in an Instant Pot
If you want to make scrambled eggs in an Instant Pot, the best way to do it is by using the “manual” or “pressure cook” function.
Simply add your eggs and desired amount of milk (I like to use 1/4 cup) to the pot and stir well. Then secure the lid and set the valve to “sealing.”
Cook on high pressure for 1 minute. Once the cook time is up, do a quick release of the pressure.
Stir in some shredded cheese (I like cheddar), salt and pepper to taste, and any other desired toppings (bacon, diced ham, sautéed veggies, etc.
The result is perfect eggs in just a minute or two.
How do I know when the scrambled eggs are done?
They are done when they are cooked to your desired level of doneness. I like mine on the softer side, so I take them off the heat when there are still a few wet pieces.
If you like your eggs firmer, cook them until they are dry throughout.
Serve eggs immediately.
