You are going to love this Chicken Artichoke Soup with Rice! Did you know that artichokes are loaded with antioxidants? If you’re like me, you probably weren’t sure exactly how to cook them. But, that’s the beauty of this soup. It’s easy! And, you make it in the Crock-Pot.

Chicken Artichoke Soup
So, this chicken artichoke soup is a healthy soup that is loaded with chicken and vegetables. And, the beauty of it is that you can make it in the Crock-Pot. So, even on a busy night, you can have a healthy dinner waiting for you.
So, this is a fairly flexible soup recipe. If you’re pressed for time, you can use a rotisserie chicken. Or, if you have leftover chicken from the night before or even turkey from Thanksgiving, you can use that. It really depends on how much time you have and what your budget is.
This Chicken Artichoke Soup uses rice instead of pasta. It’s a good source of fiber and it’s gluten-free. Whenever my daughter and her husband come over, we try to avoid using pasta. So, this soup is perfect for when they visit. I make a batch of cornbread for anyone who wants a piece to go with their soup.
What kind of rice can I use?
You can use whatever type of rice you have in this chicken artichoke soup. My husband loves traditional white rice. But, you can use brown rice, wild rice, jasmine rice or even basmati rice. It will taste delicious either way. And, because you cook it in the Crock-Pot, you don’t need to worry about how long to cook it.
The cook time is about four hours. The rice is added about one hour before the recipe is done. If you are using brown rice or wild rice, you can add it an hour and a half before the recipe is done just to be sure.
What size Crock-Pot do I need?
The number of ingredients and quantities in this Chicken Artichoke Soup should work fine in a 6 to 7 quart Crock-Pot. That is the standard oval-shaped Crock-Pot. If you have a smaller round Crock-Pot, you might need to adjust the ingredients down so that it all fits.

- 1 large onion, diced
- 1 Tbsp. Minced garlic
- 1 cup carrots, diced
- 2 cups celery diced
- 1 Rotisserie Chicken, removed from the bone and shredded
- 4 cups chicken stock (or use bone broth in your chicken artichoke soup)
- 2 cups of water
- 3/4 cup long-grain rice, uncooked
- 2 tsp. Italian herbs
- 2 bay leaves
- 2 tsp. salt
- ½ tsp. pepper
- ½ tsp. cayenne
- 1 Tbsp. lemon juice
- 2 14 oz. cans artichoke hearts, about 3 cups, drained.
Chicken Artichoke Soup Directions
- In a Crock-Pot add all of your ingredients except the rice to the crockpot.
- Turn your crockpot on high.
- Cook for 3 hours on high.
- Add the long-grain rice.
- Cook for 1 more hour.
