I have so many wonderful memories attached to rhubarb. My grandparents had a rhubarb plant. And, I remember my grandmother making stewed rhubarb and rhubarb pie every spring. 

This rhubarb cobbler recipe is a standard cobbler recipe with a base of rhubarb and caramel sauce. I’ve been making fruit cobbler recipes for years. But haven’t shared one in quite a while.

What is a cobbler?

A cobbler is basically a fruit filling that is baked with scoops of sweet biscuit dough on top. Unlike a crumble or a crisp, the scoops of dough are scattered around on top of the fruit filling rather than spread over the entire top.

Can I use another fruit?

Sure you definitely can. Because rhubarb is on the tart side, it’s often paired with other types of fruit. If you want a recipe for an apple rhubarb cobbler, you can simply cut the amount of rhubarb in half and add the same amount of sliced apples. Follow the same method if you want a blackberry rhubarb cobbler.

Can I make a vegan rhubarb cobbler?

This recipe is not vegan because it uses butter and milk. If you want a vegan rhubarb cobbler recipe, you can use a non-dairy option for the butter and the milk. I haven’t tried it that way, but it should be fine. 

How can I make this rhubarb cobbler gluten-free?

You can substitute a one-to-one gluten-free flour mix like this one. I’ve used it a number of times when I was making baked goods and desserts for my daughter. I’ve never had a problem substituting it.

Can I make my own caramel sauce?

Yes, you can. I used a ready-made caramel sauce because it was easier. But, I have made my own caramel sauce in the past. I used Tastefully Simple because it’s what I hand on hand. If you want to make it from scratch, here is a caramel sauce recipe.

What can I top this with?

If you want to top your rhubarb cobbler with something, you can try vanilla ice cream. Or, you can always make homemade whipped cream

Or make homemade ice cream. I love my ice cream maker with no rocksalt and use it all the time.

How do I store leftovers?

If you have leftovers, simply cover the pan with plastic wrap and put it in the refrigerator. Leftovers should stay good for three days.

When you want to eat it, you can reheat it in the oven for 15 minutes. Or, you can put your rhubarb cobbler in the microwave for a minute.

Rhubarb Cobbler ingredients

  • 1 bottle of caramel sauce
  • 4 tbsp butter
  • 1/4 cup sugar
  • 4 cups rhubarb, chopped fresh
  • 1 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk

Rhubarb Cobbler Recipe with Caramel Sauce

How to make rhubarb cobbler

  • In a saucepan over medium heat, warm the caramel sauce.
  • Gradually stir in the rhubarb.
  • Cook and stir until combined.
  • Pour into a 9″ x 9″ baking dish.
  • In another bowl, mix flour, baking powder, and salt.
  • Melt butter and add to flour mixture with milk.
  • Mix well.
  • Add sugar and stir until just mixed. The sugar should still be around the outside of the biscuit topping.
  • Drop by tablespoon onto the rhubarb mixture.
  • Bake your rhubarb cobbler at 350F for 35-50 minutes. Serve hot.

  • 1 bottle of caramel sauce (11 ounces)
  • 4 tbsp butter
  • 1/4 cup sugar
  • 4 cups rhubarb, chopped fresh
  • 1 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk

Instructions

  1. In a saucepan over medium heat, warm the caramel sauce.
