Mexican Avocado Salad Recipe
Avocado is one of those superfoods that I just cannot get enough of. If I’m not making this Avocado Chimichurri Sauce, then I am enjoying my high fiber smoothie.
Since there are so many health benefits of avocados, I try to eat them regularly.
This guac salad recipe is an easy dinner idea for the night that it’s just too hot to cook. Or, you can serve it as a side salad for evenings when you grill beef or chicken outside.
My husband grew up in Houston where Mexican food is eaten almost every day. And, when it comes to Mexican food, avocado is an absolute must.
In Spanish, this Mexican Avocado Salad recipe is also known as Ensalada de Aguacate which simply means Avocado Salad.
How do you make a Mexican Avocado Salad?
Everyone makes this recipe a little bit differently. I’ve seen some versions that add mozzarella cheese and others with no cheese at all.
I like to put black beans in my guac salad because it adds enough substance so you can enjoy it for a light lunch.
This salad is super easy to put together. You basically mix all of the ingredients except the dressing and the avocado. Then, you add the dressing, and right before serving, add the avocado.
What do I need to make this recipe?
- Avocado slicer/pitter
- Large salad bowl
- Small bowl or Mason jar for the dressing
Ingredients
- Grape tomatoes, halved
- Yellow bell pepper, seeded and diced
- Black beans, rinsed and drained
- Red onion, diced fine
- Jalapeno peppers, seeded and diced fine
- Avocados, diced
- Dressing (below)
Mexican Avocado Salad Dressing
This is what you need to make the dressing that’s used in this recipe. If you don’t have lime, you can use bottled lime juice instead. You will need about 2 tablespoons of fresh lime juice.
- Juice of 1 lime
- ¼ cup olive oil
- 1 teaspoon salt
- 2 cloves garlic, minced
How to choose an avocado
When it comes to this Mexican Avocado Salad recipe, you need a firm avocado that is not hard. Just press your thumb against the top near where the stem would be.
If it gives just a little bit, it’s perfect. If it is too soft or doesn’t give, then put it back and try a different one.

How to remove an avocado pit
I know that some people can remove an avocado pit with a big knife, but that’s not me. I love this gadget right here because it makes removing the pit so easy.
Just twist it around the side of the avocado to separate and then the pit pops right out. It’s so easy.
Mexican Avocado Salad substitutions
- Use plum tomatoes instead of grape or cherry tomatoes
- Add white onion instead of red onion
- Use 2 tablespoons of apple cider vinegar instead of lime juice.
- If you want a green salad with avocado, serve this on a bed of lettuce.
How can I store leftovers?
This salad really doesn’t store well when it comes to leftovers. The avocado will turn brown which is not all that appealing.
It is best made right before you plan on serving it. If you want to make it ahead of time, do not add the avocado until the very last minute.

Mexican Avocado Salad Recipe

Ingredients
- 1 pint grape tomatoes, halved
- 1 yellow bell pepper, seeded and diced
- 1 (15 ounce) can black beans, rinsed and drained
- ½ cup red onion, diced fine
- 2 jalapeno peppers, seeded and diced fine
- 2 avocados, diced
For the dressing:
- Juice of 1 lime
- ¼ cup olive oil
- 1 teaspoon salt
- 2 cloves garlic, minced
Instructions
- In a small bowl or jar, mix the ingredients for the dressing.
- In a large bowl, combine the ingredients for the salad EXCEPT the avocado. Pour the dressing over the salad and toss to combine.
- Just before serving, fold in the avocado.
