Since my daughter is gluten intolerant, I generally go with a gluten-free option whenever possible. With soup, it’s a fairly easy thing to do. You just substitute rice for whatever pasta option the recipe calls for.

Ingredients
- Leftover cooked chicken breast
- 1 bag of baby carrots
- 1/2 onion chopped finely
- 1 carton of O Organics organic chicken broth

Instructions
- Toss everything together and simmer for 30 minutes.

I don’t often get sick but when I do it feels like a truck hit me and I can barely stand so shortcuts are a good thing! I used to avoid the purchased stock because I’m very sodium sensitive, but when sick, the salt helps especially if I’m trying to replace lost fluids. Mom always made us Campbell’s canned chicken noodle soup so this is better with more protein and veggies.

I make a simple chicken soup like this often, and it is just the thing when one of us is under the weather. If you don’t mind garlic, I’d suggest adding a minced clove as well, it has a lot of healing properties
