With all these great reasons to eat avocados, I’ve been searching for an easy recipe like avocado toast.
The only hard part of eating an avocado is getting the avocado out of the skin. Once you know what you’re doing, it’s really quite easy. Slice the avocado in half and then scoop out the seed in the center.
Using the avocado slicer, remove the flesh of the avocado. Use it as slices or mash it in a bowl.
For the lemon zest, I used a citrus zester. It is so much easier to get the zest of a lemon with a citrus zester than trying to use a knife.

But, if you are having it instead of a cheeseburger or grilled cheese, it can be a better choice if you’re trying to lose weight.
Avocado toast with hard-boiled egg
This easy avocado recipe is one of the most flexible healthy lunch recipes I make. You can make it so many different ways depending on your preferences.
The eggs can be fried, poached, hard-boiled, or mashed. The avocados can be sliced or mashed. You can enjoy it on toast, crackers, Melba toast, bagels or whatever other types of bread you have on hand.

Now, the kids have always balked at slices of avocado, but they are fine with a thin layer of guacamole under the egg. Just experiment a bit with the way you prepare it.
And, to keep this light on the meat, you can skip the bacon and instead add diced chives, fresh spinach leaves, or pomegranate arils (seeds) over the top. You can turn it into a sandwich with a top slice of bread.
Pro Tip:
If you want to take this for lunch but don’t want the avocado to get brown, sprinkle a little fresh lemon juice over the top, spread it evenly over it with a knife.Then seal it tightly with plastic wrap to keep the air out.

Avocado Egg Toast Sandwich Recipe

Ingredients
- 1 avocado
- 2 eggs
- 2 slices of bacon, fried crisp and crumbled
- 1 lemon, for zest
- 2 slices of thick cut bread
Instructions
- Mash the avocado.
- Toast the bread.
- Fry the bacon until crisp. Crumble.
- Fry the egg.
- Spread the toasted bread with mashed avocado.
- Top with the fried egg, crumbled bacon and lemon zest.
- If you'd rather, leave out the bacon and instead top with dill, chives, pomegranate seeds, fresh spinach leaves or anything else you like.
