Iced Rhubarb Tea Recipe

I love cold drinks during the warmer months but I really try to pay attention to what’s in them. Most of the drinks you can buy in the grocery store are loaded with ingredients I can’t pronounce from artificial colors and sweeteners to GMO ingredients I don’t want to eat.

While I love making homemade lemonade with stevia, sometimes I want something different like this iced rhubarb tea recipe.

This iced rhubarb tea recipe is super easy to make. While the sweetness in this recipe typically comes from sugar (please buy organic), you can easily use stevia, honey, or even agave nectar if you want to instead.  

In Vermont, rhubarb is the first spring crop we get. It’s a perennial and comes back every year. I know that it’s really common in colder areas but much harder to grow down south.  

If you cannot grow it in your area, check the produce section in your grocery store and you may find it there. I make this one for one person but you can easily double or triple it to make it for a crowd.

While I generally enjoy this in the spring, it’s very easy to freeze rhubarb to use all year round. Just cut the rhubarb into one-inch chunks, place it in a freezer bag or glass freezer container and freeze.

This iced rhubarb tea recipe works just as well with frozen rhubarb as it does with fresh rhubarb.

How much sweetener should I use?

If you like your rhubarb iced tea northern style, 1 tablespoon of sugar should work. If you are looking for sweet tea, double the amount of sugar to taste.

This is the perfect summer drink on a hot day. If you want to drink this as a hot rhubarb tea, just don’t pour it over ice.

Can I make rhubarb mint tea?

You definitely can. Just add a few springs of rhubarb to your tea to give it a delicious, refreshing minty taste.

Ingredients

  • 1 cup or rhubarb stalks, chopped
  • 1 tbsp organic sugar or equivalent stevia (double for sweet tea)
  • 1 cup of water

Instructions

  1. Place the rhubarb and the water in a small pan and cover it.
  2. Bring it to a boil, turn it down, and simmer very gently for about 30 minutes, adding more water if necessary.
  3. Remove from heat.
  4. Strain the rhubarb from the water, allowing the water to drain into a glass or glass jar.
  5. Add the sugar and stir to dissolve.
  6. Refrigerate until cold.
