This paleo pancake recipe is one of my favorites. I’ve been following the paleo diet for a while now and for the most part, I don’t miss the way I used to eat. This strawberry paleo pancake is one of my favorites.

Strawberry Paleo Pancake Recipe
Yes, I occasionally get cravings for potato chips or macaroni and cheese, but generally, I do OK. I have noticed that one of the things that I consistently miss are baked goods.
Thankfully, this paleo pancake recipe is close enough to a strawberry muffin recipe that it takes care of my cravings.
Strawberries are one the first spring berries we see in Vermont. While we still have a few months to go, I have noticed that there are USA grown strawberries available in the grocery store right now.

In the past, I’ve made my paleo banana pancake recipe so I decided to try a strawberry paleo pancake recipe in honor of spring.
I’d love to try a paleo pancake mix but for now, these homemade paleo pancakes are delicious. You might want to try my strawberry rhubarb sauce recipe if you have a lot of strawberries to use.
Pancakes are one of my weaknesses. Prior to starting the paleo diet, I enjoyed them loaded with butter and syrup. Now, I use a small drizzle of syrup over the top or I top with fresh fruit instead.
While maple syrup is not truly paleo, our neighbor sugars the trees in our backyard so the maple syrup I use is about as local and natural as it gets. You can top these pancakes with fruit, almond butter or coconut cream if you prefer.
These really are the best paleo pancakes.

Strawberry Paleo Pancake Recipe

Ingredients
- 1 1/2 cups finely ground almond meal flour
- 2 eggs
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup pureed strawberries
- 1/4 tsp baking powder
- 1/4 cup coconut or almond milk
- coconut oil for frying
Instructions
- Mix all the ingredients except the coconut oil for frying.
- Add the coconut oil to a frying pan and heat till melted.
- Use 1/4 cup batter to make each pancake.
- Fry until golden brown on each side.
- Top with more pureed strawberries or real Vermont maple syrup.
