Hot Chili Recipe: Hunting Cabin Chili

When I received the 101 Stovetop Suppers cookbook, I knew that this Hunting Cabin Chili recipe was going to be the recipe I prepared. Chili is one of my favorite fall recipes because it can be served so many different ways.

In my home, we serve chili on top of rice.  It’s equally as delicious over pasta, with cornbread or topped with corn chips and cheese.

 I have a friend who likes to eat chili topped with sour cream and chopped scallions.  However you like to eat chili, you need to try this Hunting Cabin Chili recipe soon.

I love that this can be prepared in one pot or pan. That means less clean up time for me which is always a good thing.

Hot Chili Recipe: Hunting Cabin Chili

If you’re looking for winter cabin recipes, make a big pot of this Hunting Cabin Chili. This hot chili recipe is perfect for a cold, snowy winter day.

Prep Time 10 minutes
Cook Time 3 hours
Total Time 3 hours 10 minutes

Ingredients

  • 2 to 3 lbs of ground beef
  • 1 onion chopped
  • 1 green pepper, chopped
  • 16 oz jar salsa
  • 30 oz can light red kidney beans, drained
  • 3 15 1/2 oz cans dark red kidney beans, drained
  • 1/8 t hot pepper sauce
  • salt to taste

Instructions

  1. Brown beef in large soup pot over medium heat; drain.
  2. Add remaining ingredients to pot.
  3. If needed, add enough water to just cover ingredients.
  4. Bring to boil. Reduce heat to low; cover and simmer 2 to 3 hours until thickened.

  8. WOOHOO! It’s chili season! I just grabbed all of my chili ingredients yesterday.  I might just tweak my usual recipe a bit.  I’m always looking for ways to live it up.  I don’t normally add green peppers and I love the idea of adding salsa.  You reminded me that I forgot the jalapeno’s for the jalapeno cheese corn bread.  I might just be serving it over rice or pasta, as well, so I can increase the longevity of the chili.  No matter how much I make it always seems to go so fast.  I could eat chili year round, though.

  10. Yum! I’ve never thought to add salsa before, but I have added Rotel. It’s a little too hot for my kiddos, though, so I don’t add it as often.

  11. I bet my husband would LOVE this! I have actually never made chili. This is one of the only things my hubby will make himself. But, this looks like a great recipe to try and switch it up!
