Breakfast Recipe for Yogurt Parfaits in Tortilla Cups
I love fresh fruit and Greek yogurt in the morning for breakfast and this is a nice change from having it with granola. It’s a very versatile recipe because you can use whatever type of fruit is available in season in your area.
You could even make it with canned fruit if you wanted to. Use dairy-free yogurt & butter substitute to make this a vegetarian breakfast recipe.
There are lots of different parfait bowl recipes but what makes these unique is that they are served in tortilla cups. That means that if you need to make a yogurt parfait for a crowd, it’s easy to do with these little cups.
You don’t have to worry about any type of serving bowl with this recipe.
Making tortilla cups
It’s really easy to make these tortilla cups. You just need tortillas and a muffin tin. Or, if you prefer, you can purchase the tortilla cups already made and frozen.
Then, you just need to bake them until they are done. Allow them to cool. And, fill them with fresh fruit and yogurt.
If you don’t have tortilla cups, you can easily use a homemade pie crust. Just cut out small rounds and use those in the muffin tin.
Best berries for yogurt parfaits in tortilla cups
You can use any type of fresh berries you have available. I used blackberries and strawberries.
But, you could use raspberries and blueberries as well. And, if it’s not berry season, you can chop up apples or use canned fruit if you prefer.
If you love tortillas, why not try these baked tortilla chips with cinnamon and sugar?
Can I make these ahead?
You can make the tortilla cups ahead of time if you want to. Just keep them tightly covered until you need them. You can also cut up the berries to be ready to use when you want them. I would not assemble them until right before you serve them. The tortilla cups will get soggy on the bottom if you make them ahead of time.
