And, to make things a bit more complicated, you will see plain cinnamon and Cassia cinnamon. Cassia cinnamon is the type you find at the grocery store. It tends to be stronger but not as high a quality. 

Ceylon is the “true” cinnamon and is much higher quality than Cassia. While all of these different essential oils come from the same family, they are not completely identical.
