I am always looking for a healthy berry dessert recipe. We love going strawberry picking in the summer. And, there is a local strawberry only a few miles from our house. That means loads of freshly picked strawberries to cook with. If you want something that’s a little bit different than strawberry shortcake, keep reading.

Berry Dessert Recipe
This berry dessert recipe looks fancy so it’s a great one to serve when you’re expecting company. So, if you’re wondering exactly what a galette is, let me explain. Galette is a term that’s used in French cooking. It basically means a free form pie crust. I’ve also heard them referred to as “rustic tarts.”
So, there are lots of strawberry dessert recipes out there. You can do a simple strawberry pie or something a bit fancier like a strawberry brownie trifle. I really love using fresh strawberries when I bake. But, you could substitute frozen strawberries if you need to. If you’re going to make no bake berry dessert recipes, I would definitely make sure to use fresh strawberries.
Now, if you want a 10 minute strawberry galette, this isn’t quite that quick. But, it’s close. This recipe starts with pre-made pie crusts so literally, you can have it on the table in less than 30 minutes. And, most of that is the time you need to cook the galette.
So, you can use a gluten-free pie crust if you’re gluten intolerant. Or, you can make a pie crust from scratch if you prefer. There’s nothing I dislike more when it comes to cooking than rolling things out. You can easily make this strawberry galette vegan by choosing a vegan pie crust or by making your own. You can skip the step where you brush the egg on the crust.

Now, if you love triple berry recipes, there is no reason that you cannot use a variety of different berries in easy berry dessert. Just cut the number of strawberries in thirds. Then, add in equal amounts of blueberries and blackberries. That’s all there is to it. You’ve gone from a strawberry galette to a mixed berry galette.

Easy strawberry galette
One of the reasons I love this easy strawberry galette recipe is that you don’t need to use a pie plate. That means that if you’re making your own pie crust, your crust does not have to be a perfect circle. Am I the only one that can’t do that? Just place the crust in whatever shape it’s in on the cutting board and fill it with your favorite berries. Fold up the edges toward the middle to keep the filling in. And, that is really all there is to it. OK, there are a few more steps but it’s super easy.
So, this recipe uses small strawberries which means that you should pick them toward the early part of the summer. Most of the strawberries you buy in the store will be larger. So, if you find that you have larger strawberries, just cut them in half or in thirds depending on how large they are. You may also want to get a strawberry huller which makes removing the strawberry top so much easier.
When you make your favorite berry dessert recipe, you will want to store the extra strawberries in a container that is vented. That way, the strawberries will stay fresh and won’t get soft or moldy. Fresh berries go bad so quickly and it’s a shame to let them go to waste before you can bake with them.
What can I serve with this berry dessert recipe?
I don’t typically top my galettes with anything. But, there is no reason why you cannot add a scoop of vanilla ice cream or a spoonful of whipped cream. If you are going to use whipped cream, make sure that you make your own. There’s nothing better than making homemade whipped cream. The taste difference is absolutely amazing, I promise!
Berry Dessert Recipe: Berry Delicious Strawberry Galette
You are going to love this berry dessert recipe. This berry delicious Strawberry galette is a perfect summer treat.
Ingredients
- 2 premade pie crusts
- 4 C. small fresh whole strawberries
- ⅓ C sugar, plus a pinch for sprinkling
- 1 egg
- ½ tsp water
Instructions
- Preheat oven to 350 °F.
Allow pie crusts to sit at room temp (or follow directions on box to thaw, if frozen).
Line a baking sheet with parchment paper. - Add sugar to strawberries in a bowl and stir until coated.
- Open pie crusts and put half of the strawberries in the center of each crust.
- Begin to fold crust over the center, leaving a “hole” in the middle showing the strawberries.
Do this by folding one side of the crust toward the middle, then the next, adding a little water if needed, and pinch seems.
(This is easiest done on the baking sheet so you don’t have to lift it up and place in on risking spilling.) - Beat the egg with water and brush over crusts.
- Sprinkle crust with a bit of sugar.
- Bake for 20-22 min, until crust is golden brown and cooked through.
Let cool.
Notes
There will probably be some juice that comes out while cooking.
If there is a lot of juice, avoid the crust from getting soggy by transferring to a wire rack with baking sheet underneath to catch any drips.

LOL Galettes are so much easier than dealing with a traditional pie crust.
