Benedictine Dip
Benedictine dip or spread was first made in the early 1900s. It was originally used as a spread for sandwiches but has also been used as a dip. Jennie Carter Benedict was a restaurant owner and caterer in Louisville, Kentucky, and created this recipe.
The Blue Ribbon Cookbook featured her original recipe in 1922. If you remember stories of genteel ladies enjoying cucumber spread sandwiches, it’s entirely possible that this Benedictine dip recipe was used when they were made.

Benedictine dip recipe
Cucumber Spread Sandwiches
If you’d like to try serving cucumber spread sandwiches, they are very simple to make.
- Cut the crusts off slices of white bread.
- Peel a cucumber and cut it into slices.
- Place the cucumber slices between two paper towels to remove moisture.
- Spread the Benedictine dip onto each slice of bread.
- Place a layer of cucumber slices onto the dip.
- Cover with another piece of bread (with dip on it).
- You will have two pieces of bread with Benedictine spread/dip on it and cucumbers in the middle.
- Cut into squares.
This homemade Benedictine recipe is absolutely amazing. It’s a light dip that I enjoy with pita chips. My husband prefers potato chips. You could use fresh pita’s or use it as a spread on sandwiches if you would prefer.

Ingredients
- 1 large cucumber
- 8 ounces cream cheese, softened
- 2 tablespoons grated onion
- 1/4 tsp salt
- 1 tablespoon mayonnaise
- Fresh Dill (optional)
- dash green food coloring
Instructions
- Peel the cucumber and grate.
- Then drain any water out of it. Add it and all of the other ingredients to a food processor and pulse to mix.
- Serve!
