We’re having Christmas at my house so I feel the need to find healthy holiday recipes like this Mango Shrimp Ceviche recipe. I know that most people don’t think of Christmas as a time to enjoy healthy holiday recipes but it’s totally possible to make something that’s healthy that will also wow your guests.

Stay away from the prepared foods and make things from scratch. No, it doesn’t have to take tons of time to cook from scratch either, trust me. You can do it.

What is ceviche?

OK so if you’re anything like me, your first question was “What the heck is ceviche?” followed closely by “How the heck do I say that?”  First off, ceviche is a South American dish that typically has marinated raw fish or seafood and is served as an appetizer.  

I’m not into raw fish and seafood even if it is marinated so the shrimp in this mango shrimp ceviche recipe is cooked.  Second question, how do you pronounce it? Ceviche is pronounced “Say Vee Chay” with the emphasis on the second syllable. Hope that helps.

Can you eat raw shrimp in ceviche?

I love easy appetizer recipes. When we entertain, I really want to offer guests an appetizer before the main course. But, I want something simple to make and during the summer, I don’t want to heat up the house to cook it. 

This easy ceviche recipe is a perfect choice because it requires no cooking. Buy the shrimp pre-cooked from the store along with fresh fruits and vegetables and you are all set.

But, you can also use raw shrimp if you prefer. The raw shrimp should be coated in citrus juice. The juice will “cook” the shrimp in the same way as if it had been cooked.

How long should ceviche be marinated?

It all depends on the fish pieces you use. It will need to marinate for at least thirty minutes to an hour. You can marinate it for up to two hours but I would not let it marinate for more than that or it may pickle.

Can I make this ahead of time? 

I would not make this any more than a few hours ahead of serving it. You want to make sure that it is as fresh as possible. Make only what you need for your party. 

If you want to save time in preparation, you can pre-slice your fruit and vegetables. Then, just assemble it at the last minute.

Mango Shrimp Ceviche

This mango shrimp ceviche recipe is a perfect holiday appetizer. Try this delicious shrimp ceviche with mango for your next party.

I'm not into raw fish and seafood even if it is marinated so the shrimp in this mango shrimp ceviche recipe is cooked.

Prep Time 8 hours
Total Time 8 hours

Ingredients

  • 1 lb of frozen cooked shrimp - medium sized
  • 1 tbsp extra virgin olive oil
  • 1 bag of frozen organic mango (I use Earthbound Farms)
  • 1/2 cup cherry tomatoes, cut in half
  • 1/4 cup finely sliced celery
  • 1/8 cup finely chopped onion
  • 1 tbsp cilantro, chopped, fresh is best if you have it
  • 1/4 cup freshly squeezed orange juice
  • salt and pepper to taste

Instructions

  1. Defrost the shrimp according to the package directions
  2. Place the shrimp in a large bowl and drizzle with olive oil
  3. Stir in the mangoes, tomatoes, onion and cilantro. Drizzle orange juice over the top & toss to combine.
  4. Season with salt & pepper. Cover. Chill up to 8 hours.

  8. Omgosh I could live on ceviche exclusively! I love the bright, crisp flavors – and this one looks really fantastic! I might need to pick up some shrimp today = ) We actually have “La Cevicheria” in LA and they serive like 15 different ceviches… so good!
