You’re going to love this shortbread cookie recipe with Truvia. My family’s favorite snack is cookies. Everyone loves them including my husband. As a diabetic, he really doesn’t need to eat cookies with traditional sugar. So, I did a little experiment and replaced our traditional shortbread cookie with the cookies from this recipe provided by Truvia.
Shortbread Cookie Recipe with Truvia
I’ve been invited to participate in the Truvia Lunch Makeover Challenge. Each person has been challenged to remove one traditional sweet from their lunch and replace it with a sweet made from Truvia natural sweetener. This slashes the calories found in sugar. And, it eliminates the concern of a sugar “high” that kids often experience after eating sweets. Truvia contains stevia which is an all natural herb that’s many times sweeter than sugar is.

If you’re looking to eat foods with a lower glycemic index or are trying to lose weight or eat more naturally, definitely try Truvia in your baking. You will notice a difference in the taste but it’s worth the change!
What is Truvia?
Truvia is a sugar substitute that contains stevia, erythritol, and natural flavors. Truvia is not 100% stevia. But, it has no calories and no impact on your glycemic index. It does not cause tooth decay or impact blood sugar. Since my husband is a diabetic, snacking on this type of snack has less impact on his blood sugar than a snack made with sugar.
This is a basic shortbread cookie recipe that can be modified to your taste preferences. I often ad a drop of almond extract or lemon extract to the recipe to change the taste. If you’re not watching your sugar consumption, you can drizzle icing on top of these or top them with a nut butter.
There is definitely a different taste to these cookies compared to cookies that use white sugar. And, there’s also a slight aftertaste. But, I don’t mind it since I use Truvia to sweeten my coffee all the time. But, it is noticeable especially to someone who has never used it before.

- 1 cup unsalted butter, room temperature
- 3 1/2 Tbsp Truvia natural sweetener spoonable
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 Tbsp cornstarch
- 1/4 tsp salt
- Preheat oven to 350F.
- Cream butter, Truvia, sugar, egg, and vanilla in a large bowl.
- Blend flour, cornstarch, and salt together in a medium bowl.
- Add dry ingredients into butter mixture.
- Roll dough into one inch balls and place on cookie sheet approximately 2 inches apart.
- Flatten cookies gently with the bottom of a glass dipped into cornstarch or a fork.
- Bake 16-18 minutes or until the edges are light golden brown.
- Place cookie sheet on cooling rack for 20-30 minutes before removing cookies.
