We eat Mexican flavors regularly since my husband is from Texas originally. But, I like to do something a little bit more festive on Cinco de Mayo. That said, I don’t have a lot of time to put together a healthy meal, so simple is good in my book.
Simple Cinco de Mayo Recipes
Of course, there are a lot of fun snack and meal ideas you can put together for Cinco de Mayo. The kids love to dip, so we always have a big bag of CHI-CHI’S tortilla chips and a few varieties of CHI-CHI’S salsa. I’m all about mild salsa, but the kids tend to love the hot stuff, so I buy some for everyone.

Mexican baked potatoes
This year, I decided to keep it simple and put together Mexican Baked Potatoes with some Virgin Margarita Mocktails for everyone to enjoy. It’s all easy to put together before dinner, so there isn’t a lot of time in the kitchen.

Virgin Margarita Mocktails
Ingredients
- Limes
- One can of Margarita frozen concentrate
- 1/4 cup powdered sugar
- 2 cups of club soda
- Crushed ice
Directions
- Put the Margarita frozen concentrate and crushed ice in the blender and blend.
- Carefully stir in the club soda.
- Pour into individual glasses.
- Top with a slice of lime.

Mexican Baked Potatoes

Ingredients
- 4 yellow gold potatoes (or more depending on family size)
- 2 jars of CHI-CHI'S Thick & Chunky Salsa (we chose Mild and Hot)
- Grated Colby-Jack cheese
- Sour Cream
- Scallions
Instructions
- Bake the potatoes at 400F for 60-90 minutes depending on the size. They are done when the knife slides through easily.
- Remove from the oven.
- Slice the top open and top with your favorite CHI-CHI'S salsa, Colby-Jack cheese, sour cream, and chopped scallions.
