Easy Chicken Paprikash Recipe

Chicken Paprikash or Paprika Chicken is a Hungarian dish that gets its name from the paprika that gives the dish a bright red color. Paprika is a common spice used in Hungarian cooking. Paprika is a dried and powdered spice that is made from certain varieties of peppers. It’s traditionally served over egg noodles although if you want to keep it gluten free, you can easily serve it over rice or even gluten free pasta.

Ingredients

  • 1 pound boneless skinless chicken breasts or thighs cut up & cooked
  • 1 tbsp olive oil
  • 1 green pepper, sliced thinly
  • 1 onion, chopped finely
  • 2 tsp paprika
  • 1 cup chicken broth
  • 1 can of Muir Glen Diced Tomatoes (14.5 oz)
  • 1 tbsp lemon juice
  • 1/3 cup sour cream
  • salt & pepper to taste

Instructions

  1. Cook the chicken in the olive oil until browned.
  2. Add the peppers and onions and cook until soft.
  3. Add the chicken broth and cook until reduced by half.
  4. Add tomatoes and simmer, turning the chicken occasionally, until the chicken is cooked completely.
  5. Remove from heat and stir in the sour cream. Serve.
