Ingredients
- 1 pound boneless skinless chicken breasts or thighs cut up & cooked
- 1 tbsp olive oil
- 1 green pepper, sliced thinly
- 1 onion, chopped finely
- 2 tsp paprika
- 1 cup chicken broth
- 1 can of Muir Glen Diced Tomatoes (14.5 oz)
- 1 tbsp lemon juice
- 1/3 cup sour cream
- salt & pepper to taste
Instructions
- Cook the chicken in olive oil until browned.
- Add the peppers and onions and cook until soft.
- Add the chicken broth and cook until reduced by half.
- Add tomatoes and simmer, turning the chicken occasionally, until the chicken is cooked completely.
- Remove from heat and stir in the sour cream. Serve.
