Bok Choy Slaw Recipe
In the summer when there are a lot of fresh vegetables in our garden and at the farmer’s market, one of my favorite ways to enjoy fresh summer vegetables is in a vegetable slaw. Many times when you hear “slaw recipe,” you automatically think of coleslaw drenched in a heavy mayonnaise like dressing.
While that’s certainly a great way to enjoy cabbage, there are a lot of slaw recipes that use vegetables other than cabbage (like this bok choy slaw recipe) and don’t include mayonnaise.
Mayonnaise is fairly high in fat and isn’t necessarily something I want to eat regularly. Commercially prepared mayonnaise generally has canola oil which I try to avoid.
There is also no dairy/eggs in the recipe so it’s suitable for those with allergies.
This Bok Choy Slaw recipe is a delicious, crunchy slaw that includes bok choy, carrots and scallions. Nothing in the recipe is cooked so it is the perfect summer dish when you don’t want to heat up the oven.

Ingredients
- 1/4 cup rice vinegar
- 1 tbsp extra virgin olive oil
- 2 tsp sugar
- 2 tsp Dijon mustard
- 1/4 tsp sea salt
- 6 cups (1 lb) thinly slided bok choy (I used a food processor)
- 2 medium carrots, shredded
- 2 scallions, sliced thinly
Instructions
- Whisk the vinegar, extra virgin olive oil, mustard and salt in a large bowl until the sugar dissolves.
- Add the sliced vegetables and mix well.
- Refrigerate until time to serve.
