Potatoes are one of the least expensive items in the whole produce department of your grocery store. They are also one of the most nutritious. Those reasons alone are enough to convince me I should add some to my cart each week.

Potatoes make a great, inexpensive base for a meal.  They are also gluten-free which makes them a fantastic choice for my family.

It’s easy to add a little excitement to your potatoes by choosing one of these easy healthy potato recipes. Don’t be afraid to experiment with new tastes and flavors.

Food can get boring when you don’t.

  • Top a baked potato with chili or salsa or try adding a bit of cheese and shredded chicken.
  • Top mashed potatoes with Ratatouille or sauteed or stewed seasonal vegetables like zucchini or summer squash with onions.
  • Add olive oil and garlic seasoned roasted potatoes to a green salad.

Is it better to boil or bake your potatoes?

Both of these methods are good choices if you want to prepare potatoes for a healthy diet. There will be no added fat or calories when you cook your potatoes.

The one thing you might want to consider is that if you bake potatoes, you will be eating the skin which is high in fiber. Most people do not boil their potatoes with the skin on.

Potato Storage Tips

To help your potatoes last as long as possible, store them at a temperature between 45F and 55F.  Storing them in the refrigerator can cause them to be discolored when cooked.  

We store ours in our back hallway which is on the cold side since the heat doesn’t reach that part of the house well. A vegetable storage bin in a cooler area of your home will work just as well. Just don’t store them anywhere that is sunny and hot.

Do you soak potatoes before cooking?

You don’t have to soak potatoes before cooking. But, soaking your potatoes will help remove some of the starch.

Just peel and cut the potato as you normally do. And, soak it in a pan of cold water for up to two hours before you cook it.

Make sure that you drain the water and rinse the potatoes before you cook them. That way you will remove the starch from the potatoes before you cook them.
