When I made this recipe originally, I used Meyer Lemons for the glaze on top. But, I wanted to make it again and wasn’t able to find them in my store. So, instead, I used regular lemons and it came out just as delicious! Feel free to create this recipe with either Meyer Lemons or regular lemons. You’ll love it just the same.

Lemon Coffee Cake Recipe with Cake Mix

This Lemon Coffee Cake Recipe with cake mix is one of my favorite recipes to make when we’re entertaining. I’ve served it for Easter and Mother’s Day. It has always been a huge hit because it is so moist. 

You can create a streusel topping for it or make a glaze with confectioner sugar and lemon juice like I did. Or, you can serve it without a topping. If you want a lemon breakfast case that is not as sweet, you can skip the topping or use streusel instead. 

You can also toss in a handful of blueberries to make this a Blueberry Lemon Coffee Cake. Experiment until you find your favorite.

Lemon Coffee Cake Recipe with Cake Mix

If you choose to make the Lemon Glaze for the top, you will need to follow these directions. If you prefer a lemon coffee cake with streusel, you can simply add a streusel topping before you bake it.

Simple Lemon Icing

  • 1 cup confectioners sugar
  • 1 tbsp lemon juice (Meyer lemon or other)
  • 2 tsp grated lemon zest (you will need a zester)
  • 1 tbsp milk

Combine all ingredients in a bowl and stir until there are no lumps remaining. Drizzle over the lemon coffee cake.

What are Meyer lemons?

Did you know that Meyer Lemons are actually a cross between a traditional lemon and a mandarin orange? They are sweeter and have thinner skin. Since it is much sweeter than a traditional lemon, you need to add less sugar when making drinks like lemonade.

Lemon Coffee Cake Recipe with Cake Mix

Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 1 package yellow cake mix with pudding
  • 1 package instant lemon pudding mix
  • 1 cup of sour cream
  • 4 large eggs, lightly beaten
  • 1/2 cups vegetable oil

Instructions

  1. Combine cake and pudding mixes, sour cream, eggs and oil.
  2. Mix on medium speed for 2 minutes.
  3. Pour into 2 greased loaf pans.
  4. Bake at 350° for 35-40 minutes or until tests done.

  1. Made this today & it is delicious! I only had a lemon cake mix, so I used that with the lemon pudding mix. I did also add a tbsp of fresh lemon zest & a tsp of lemon baking emulsion (flavour doesn’t bake out like extract will) for an extra kick of lemon because I love lemons! I also added a tbsp of lemon zest to the glaze. Thank you for the delicious recipe!
