What are wild ramps?
Wild ramps (also called wild garlic) are a type of wild edible plant. They have long, slender leaves resembling scallions and pink to pale purple flowers in spring. Wild ramps are packed with nutrients and make a delicious addition to any meal.
When is ramp season?
In the early spring and summer, you can find wild ramps in woodlands and meadows. Look for their long, slender leaves, which resemble scallions. The leaves are usually the first to appear before the flowers bloom.

Where can I find them?
You will find this wild plant on the forest floor at the base of hardwood forests. They have a very short window for harvesting.
When you forage, I recommend picking up this wild edibles book. Wild leeks are easy to identify because they smell like an onion if you tear the leaf.
How do you harvest ramps?
When harvesting wild ramps, it’s essential to be mindful of the environment. Make sure only to take a few plants from each area, leaving plenty for other animals and future harvests.
You can use scissors or a knife to cut off the leaves at the base of the plant. Never pull up the whole plant by the roots.
Take only a few leaves from each plant. When cultivating wild leeks, leave the ramp patch in the same condition you found it.

What can I use instead of ramps?

If you don’t have ramps or want to make it when they are not in season, the closest alternative would be scallions.
To make the biscuits, you’ll need
- Muffin tin
- Silicone muffin liners
- Food processor (optional)
Wild garlic biscuits ingredients
- 1 1/2 cups of all-purpose flour
- Two eggs
- 2 tbsp whole milk
- 2 tsp baking powder
- 3 tbsp olive oil
- 1/2 cup Parmesan cheese, grated
- 1/4 cup finely chopped wild garlic
NOTE: If you do not have Parmesan, you can substitute cheddar.
How to make wild garlic biscuits
1 Whisk the eggs with the milk and olive oil.
2 Add grated cheese.
3. Then mix the flour with the baking powder.
4. Add the dry ingredients to the wet.
5. Add the chopped wild garlic.
6 Bake the biscuits at 400F degrees for about 25 minutes.
