I look forward to spring every year because I know I”ll be able to head outside and pick fresh greens from the garden for dinner. Of course, you don’t have to use only spinach greens. You can add in arugula or any type of leaf lettuce you happen to have. You can even toss in a handful of spring dandelion greens.

One of the reasons that I love this easy spinach salad recipe so much is that you start with baby spinach. That means that you really don’t have to do any chopping or shredding of the lettuce at all. It’s also highly versatile so you can really add whatever types of fresh vegetables you have on hand.

Ingredients
For the Salad
* 5–6 cups fresh baby spinach, washed and dried
* ½ cup pomegranate arils
* ¼ cup sliced almonds or chopped walnuts (toasted if desired)
* ¼ cup crumbled feta or goat cheese
* ¼ small red onion, thinly sliced
For the Dressing
* 3 tablespoons olive oil
* 1 tablespoon balsamic vinegar (or apple cider vinegar)
* 1 teaspoon honey or maple syrup
* ½ teaspoon Dijon mustard
* Salt and black pepper, to taste
