With our own ducks and chickens, the one thing we usually have a bunch of is eggs. When I saw this recipe in Rose Elliot’s New Complete Vegetarian, I knew I had to try it.

Quick Souffle Omelette
Serves 4
6 eggs, separated
2 Tbsp flour
2 oz Gruyere or Cheddar cheese, grated
salt & freshly ground pepper
1 Tbsp butter
Preheat the oven broiler to high. Whisk the egg whites until stiff and reserve while you beat the yolks with the flour until smooth and creamy. Mix in the rated cheese. Fold the egg whites into the egg yolk mixture, along with some seasoning. Melt the butter in a frying pan with an oven proof handle or a shallow ovenproof dish suitable for putting under the broiler. Pour the egg mixture into the piping hot butter and fry quickly until the underneath is cooked; then place under the hot broiler to cook the top and finish the souffle. Serve immediately.
