I have been hearing a lot about the Paleo diet lately. Besides knowing that it was grain free (and gluten free), I really didn’t know anything else about it. Because my daughter is gluten intolerant, I am always searching for new gluten free recipes. I decided to learn more about the Paleo diet and see if it would work for us. The word Paleo is actually short for Paleolithic.
Our Paleolithic ancestors were in shape, muscular, and full of energy. Compare that to your average man or woman today who is overweight, flabby, and tired. Some believe that the problem began when we started farming. Farming provided ready access to grains and we became dependent on them. Of course, grains are carbs and the carbs we do not burn off get turned to fat. Since farming meant that we had a food supply readily available we did not have to search for, our activity level dropped.
The Paleo diet includes foods like proteins, fruits, vegetables, nuts, and seeds. It’s excludes grains, legumes, dairy products, potatoes, salt, sugar and processed oils. The fact that it excludes grains means that it is gluten free.
Paleo Diet Cookbook
Learning to cook without grains and dairy isn’t something that comes naturally to me. Like most people, many of our recipes include grains and dairy. I find this especially true when I want to make a dessert or a snack. Cakes, cookies, pies… all my favorite recipes have grains in them. Paleo Desserts by Jane Barthelemy contains 125 delicious favorites that are gluten and grain free. There is a helpful introduction in the front of the book to tell you a bit about the Paleo diet in general.
This Paleo diet cookbook contains recipes for cakes and cupcakes, muffins and breads, cookies and bars, chocolate desserts, pies and tarts; crisps, crumbles and other treats; puddings and mousses, frozen desserts; sauces, frostings, and fillings; and milkshakes, smoothies, and other beverages. Yes, you really can make all of that without grains or dairy.
Each recipe includes a brief description, a detailed ingredients list, easy to follow directions, and information like yield and equipment needed. I find this very helpful. I hate getting ready to make a recipe only to find out that I don’t have one of the needed pieces of equipment. Some of the ingredients are ones that I’m not familiar with using but that will be the case with any new type of diet. They also use Just Like Sugar Table Top sweetener which is a gluten and grain free sweetener.
I love the photographs in Paleo Desserts. There is a whole section in the center of the cookbook that is loaded with full color photographs. There really is a great selection of gluten free and grain free recipes included in this Paleo diet cookbook. I love that there are some that are suitable for guests like Dark Chocolate Truffles as well as some that would work well for a family meal like the Applesauce Cupcakes. I even found a Superfood Energy Revitalize Smoothie that was a great way to start my morning!
