So, knowing that I love pasta and cheese, it’s probably pretty easy to figure out that lasagna tops my list of favorite recipes. Thankfully, this lasagna for two recipe is low carb and keto. That means I don’t need to worry about having a huge slice (or two) for dinner because it’s healthy.

If you’re like my husband, lasagna must include layers of ground beef and spicy sausage. However, I know that not everyone likes meat lasagna. So, if you want a vegetable lasagna for two, you can use sliced zucchini, mushrooms, and tomatoes in place of the meat in your favorite recipe. This lasagna for two recipe is made with layers of eggplant and ground beef however you can add more meat or extra vegetables if you like.

Can you make lasagna in a baking pan?

You can really make lasagna in almost any type of pan you have. The key is to adjust how long you cook it. So, an 8×8 lasagna recipe will need to cook longer than a 9×9 lasagna recipe because there is more lasagna in a smaller pan. So, this lasagna for two recipe uses a loaf pan.

This lasagna for two recipe serves two people and each has a generous slice of lasagna that’s about 16 net carbs per serving. If you want to make a lasagna recipe for 4, you can easily serve smaller slices and add a fresh garden salad to dinner. That way, you can share this recipe with friends or the kids for dinner because sharing is good!

Do you peel eggplant before you cook it?

You can if you want to. So, if the eggplant is young then the skin should be tender and you can certainly keep it on. But, if the eggplant is larger (older) you may want to peel it because the skin might be tough. I don’t always peel mine and leaving it on does add fiber to your dish. So, you should use unpeeled eggplant in this lasagna for two recipe.

How long does it take to cook a small lasagna?

So, that depends on your definition of small, the size of the pan, how thick the lasagna recipe is, etc. However, if you cover the pan with tin foil to prevent it from drying out, you should cook it for about 45 minutes. You will need to check it to be sure because different recipes will vary. So, this lasagna for two recipe cooks for 30 minutes covered and 15 minutes uncovered.

What kind of mozzarella cheese should you use?

So, you will need to shred the mozzarella cheese before you add it to this lasagna for two recipe. Now, I don’t buy pre-shredded cheese from the grocery store because they use additives to prevent it from sticking together. So, I start with whole milk mozzarella and then shred it right before I make this lasagna recipe. I’m not a fan of low-fat cheeses because I don’t think that they melt as well. If you want to lower the fat content of this lasagna recipe, you can certainly use a low-fat cheese if you like.

Can I put my lasagna together ahead of time?

Yes, most definitely because that’s one of the easiest ways to make dinner time a little bit easier. So, you can make this lasagna for two recipe over the weekend and cover it and put it in the refrigerator. Then, you can bake this on Monday or Tuesday night. I wouldn’t put it together more than two days before baking it just to be safe. So, if you want to make your lasagna recipe further ahead than that, I would freeze it in a tightly covered dish and then defrost and heat when you want to make it.

Should I cover lasagna with foil while baking it?

So, you will want to cover your lasagna with foil otherwise it will dry out. So, take the foil off for the last 15 minutes or so of the baking time so it gets a tiny bit crispy. But, keep is covered for most of the cooking time. So, if you follow the directions in the lasagna for two recipe below, you won’t have any problems.

So, looking for a lasagna for two recipe? You are going to love this easy lasagna recipe that's low carb and keto.

Cook Time 55 minutes
Total Time 1 hour 10 minutes

Ingredients

  • Medium eggplant cut into thin slices
  • 1 lb. Ground beef
  • 2/3 tsp Garlic powder
  • 1 tbsp Olive oil
  • 2/3 tsp Oregano
  • 1 c Low carb marinara sauce (Rao’s etc.)
  • 2/3 tsp Basil
  • 6 oz. Ricotta cheese
  • 1/2 c Cottage cheese
  • Salt and pepper to taste
  • 3.4 c Mozzarella cheese

Instructions

  1. Firstly, place the sliced eggplant in a colander over the sink. Salt the eggplant, and leave it to sit and drain for 20 minutes or so. This lasagna recipe uses layers of eggplant.

  2. Rinse and dry the eggplant slices. Place them on a rack on a baking sheet, and bake for 10 minutes, flipping them over halfway through baking.

  3. Brown the ground beef completely in a skillet on the stove. Add in the oregano, garlic powder, basil as well as salt and pepper to taste.

  4. In a mixing bowl, combine the ricotta cheese, cottage cheese and salt and pepper to taste. Stirring to combine completely.

  5. Layer ⅓ of the marinara sauce in the bottom of a greased loaf pan.

  7. Place a layer of eggplant slices over the sauce.

  9. Put half of the meat mixture over the eggplant layer.

  11. Spread half of the cheese mixture over the meat.
    Repeat steps 6-9 one more time.
    Place one more layer of the remaining ⅓ of the marinara sauce on top of the mixture, and top it with the mozzarella cheese.

  12. Bake the lasagna recipe covered with tin foil at 350 degrees for 30 minutes, and then uncover, baking for an additional 15 minutes uncovered. Finally, let cool for 10 minutes before serving.
