Gluten-Free French Desserts and Baked Goods is a wonderful primer on baking gluten-free.  The book contains an introduction that discusses which flours do and do not have gluten and discusses precautions that should be taken when attempting to bake for someone intolerant of gluten.

The recipe section is broken down into Breads, Brioches, Cakes, Tarts and Pies, Clafoutis, Crumbles and Puddings, Cookies and Small Cakes, Crepes, Creamy Desserts and Light Breakfasts.  The chapter on Breads is loaded with great information on how to choose the right gluten free flour and leavening agents. I’ve always had a tough time baking gluten free bread and this information is going to make it much easier to problem solve.

Each recipe contains a brief description, ingredients list and detailed list of instructions.  The color photographs included are absolutely stunning.  I only wish my finished products looked half as good as these photos do! The beginning of each chapter has a lot of helpful information on the types of flours that should be used, sweeteners, fats and leavening agents. It gives you an idea of which choices work best with which type of recipe.

The recipes in Gluten-Free French Desserts and Baked Goods are not your typical drop biscuit recipe. You will be seriously tempted by Apple Pistachio Clafoutis and Bergamot-Flavored Apple Pound Cake which I cannot wait to try as soon as I find Bergamot essential oil..
