For those that aren’t familiar with celiac disease, there is a really helpful chapter in the beginning of the book that explains exactly what it is and how it effects your body. This is a really fantastic, in-depth chapter that includes symptoms, causes, anatomy, gluten intolerance, diagnosis methods and a blank health chart and diet diary to use to record your information.
The next chapter is an in depth look at foods that do and do not contain gluten. It also explains the gluten free standards that have to be followed so you have a better understanding of the foods you should be avoiding. And, it has some great tips for gluten free shopping as well. It even gives you an aisle by aisle breakdown! It offers nutrition breakdowns for a variety of gluten free flours and other staples. Because many people who are gluten intolerant are also lactose intolerant, the book also contains information on lactose-free products. It’s loaded with gluten free nutrition facts.

It also offers a daily nutrition analysis so you can keep track of things like calories, fiber, iron, calcium, vitamin D, folate, etc. You can see information for both men and women so you can make the best decision for your lifestyle. It’s very easy to follow the exact menu plan or mix and match depending on what you like to eat. You can find the gluten nutritional value of many foods.
The recipes included are broken down in Breakfast & Brunch, Bread & Muffins, Soups & Salads, Pizza & Pasta, Vegetarian Mains & Seafood, Meat & Poultry, Side Dishes and Snacks & Desserts. The recipes are very detailed with ingredients and step by step instructions. There are tip sections on some recipes with possible substitutions. Each recipe also contains a nutrition breakdown per serving.
