Easy Pesto Recipe Anyone Can Make
Lately, I have found myself turning to fast food when I don’t have a lot of time to prepare a homemade dinner. This isn’t a habit I want to get into so I have decided to make more of an effort to find easy homemade recipes that don’t time a lot of time to make.
We often have an excess of fresh herbs in the garden. Since I enjoy my herbs when they are fresh more than when they are dried, I try to use them when I have them.
I found this easy pesto recipe in the book She Cooks, She Scores (reprinted with permission). Pesto is an Italian sauce that’s a great alternative for those that cannot have tomatoes.
What is in pesto sauce?
Pesto ingredients include basil leaves, pine nuts, garlic, Parmesan cheese, and olive oil. It is served over pasta and can be a refreshing change from the typical red spaghetti sauce.
The rabbits ate our tomato plants when they were tiny this year so I don’t have any to can. Pesto sauce is a great way to enjoy pasta when pressed for time.
Best of all, you can prepare a large batch of this easy pesto sauce recipe and then freeze some for future use.
I prefer my pesto warm so I put it in a pan and on very low heat, heat it up. Then I serve it over pasta.
You don’t need to heat up pesto to enjoy it. You can simply mix it with cooked pasta and serve it that way.

Easy Pesto Recipe

Ingredients
- 1/2 cup toasted pine nuts
- 1 1/2 cups fresh basil leaves
- 1/4 cup fresh parsley
- 2 tsp garlic, chopped
- 1/3 to 1/2 cup olive oil
- salt and pepper
Instructions
- In a food processor, combine all of the ingredients except for the olive oil.
- Blend until the ingredients are incorporated and smooth.
- With the processor running, add olive oil in slowly.
- Season to taste with salt and pepper.

I freeze my pesto in ice cube trays so I can pull out just what I need to thaw. It adds great flavor to soup too!
