What are the best foods to eat on Lent?

These seafood stuffed tomatoes can be created a few different ways. For the seafood part, you can use lobster, shrimp, crab, imitation crab, tuna or albacore. Try my seafood casserole.

It all depends on your budget and your family’s preferences. While I absolutely love lobster and crab, our grocery budget doesn’t allow us to splurge very often on that. I used sustainably caught albacore from a can when I made this and it’s absolutely delicious.

What not to eat during Lent

During Lent, many people choose to abstain from different types of food as a form of fasting or sacrifice. Traditionally, meat is commonly avoided, particularly on Fridays. Additionally, some individuals opt to forego other animal products such as dairy and eggs.

However, it’s essential to note that these restrictions may vary widely depending on personal beliefs, local customs, or individual choices. It’s always recommended to follow what feels right for you during this spiritual journey. Remember, the goal of Lent is not just about giving up but also about reflection, prayer, and growing in one’s faith. 

Tools to prepare this meal

Cutting board with juice groove – You need to core and remove the center of your tomatoes so you can stuff them. That will make a mess but you can catch all of the juice with a cutting board with a juice groove.

If you worry that this won’t be a meal for your family, you can always add a tossed salad and some crusty, homemade bread. Or, you could serve it for lunch instead. Generally, one of these seafood stuffed tomatoes fills me up for lunch.

While this makes a great idea for Lent, it also works well during the height of summer when you have too many tomatoes from the garden. It’s also gluten-free so it’s something that the whole family can enjoy.

Looking for healthy Lenten meals? Try these delicious Lenten meals that are good for you. My Seafood Stuffed Tomatoes are one of my favorite meals for Lent. 

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 5 minutes

Ingredients

  • 2 large firm tomatoes, organic is best
  • 1 6 ounce can of sustainably caught albacore tuna
  • 2 tbsp organic Greek yogurt
  • 1 tbsp Italian herbs, dried
  • 1 tbsp finely diced green bell pepper
  • 1 tbsp finely diced chives, organic
  • 1 slices of cheese

Instructions

  1. Cut off the top of the tomato and remove the insides. Toss.
  2. In a bowl, mix the albacore, yogurt, herbs, peppers and chives.
  3. Press the mixture in the tomatoes.
  4. Place a piece of cheese over the top of each.
  5. Bake 5 minutes in 350F oven.
  6. Enjoy!

  2. Ummmm. Yes. I do not need meals for lent, since I do not observe it. But I do love seafood and tomatoes. So this will be going into my rotation. I already make stuffed italian tomatoes, which is basically just cheese in a tomato. But oh so delicious! Thanks for the recipe!
