Vegan breakfast recipe – Awesome Oatmeal
A vegan breakfast can be a great way to ensure that you get a healthy start to your morning. Oatmeal is high in fiber and by adding nuts, seeds, and fruit, you get a delicious breakfast that’s good for you. I found this vegan breakfast recipe for Awesome Oatmeal in the Jazzy Vegetarian cookbook by Laura Theodore.
4 cups water
2 cups old-fashioned rolled oats
3 tablespoons raisins or dried cranberries, or a combination
2 tablespoons toasted sunflower seeds, optional
1/8 teaspoon sea salt
1 to 2 tablespoons brown sugar or maple syrup
Nondairy milk (optional)
- Put the water, oats, raisins, optional sunflower seeds, and salt in a large saucepan.
- Bring to a boil over medium heat. Decrease heat to medium low and cook, stirring occasionally, until most of the liquid has been absorbed.
- Remove from heat and sweeten with brown sugar or maple syrup. Serve with non-dairy milk if desired.
Healthy, frugal and delicious! This makes four servings. If people in your house don’t all get up in the same time, just leave the top on the saucepan and the oatmeal will stay warm for about twenty minutes. Stragglers can serve themselves a healthy breakfast when they do arrive down stairs. If you like your oatmeal to be a little bit creamier, you can add a tablespoon or two of nondairy milk to the water close to the end of the cooking time. I added a bit of flax milk to it and it came out so delicious and creamy. I also didn’t have any sunflower seeds here so I substituted some chopped walnuts instead. I love nuts in my oatmeal. It’s a great offset to the creaminess of the oatmeal. This is a great choice for a vegan breakfast recipe when you are short on time. I literally takes less than 5 minutes to prepare from start to finish.
