Twice baked potatoes are one of my all time favorite comfort foods. Actually, baked potatoes themselves are one of my all time favorite foods.  Thankfully, potatoes are a comfort food that is actually good for you!  I try to stay in shape and stay  healthy and that means eating right.  Since potatoes are completely fat free,  I can be careful with my toppings and create a treat that is not only delicious but also good for me. Not only are potatoes fat free, a medium sized potato has just 110 calories!  The skin is loaded with fiber so baked potatoes or twice baked potatoes are a healthy treat I don’t need to feel guilty about.   Because they’re high in fiber, they help keep me full throughout the day so I’m not tempted to snack. It’s got more potassium than a banana and it provides 45% of your daily value of vitamin C.  How can you possibly go wrong?

Twice Baked Potatoes

Twice Baked Potatoes recipe

4 medium Russet potatoes
1 cup steamed broccoli
1/2 cup fat-free sour cream
1 cup grated, reduced-fat cheddar

Pierce the potatoes with a fork. Preheat the oven to 450 degrees. Microwave the potatoes on HIGH for seven minutes. Remove the potatoes. When they’ve cooled down, slice them lengthwise down the center. Scoop out the center of the potatoes. Mix the portion you’ve scooped out with the steamed broccoli, sour cream, and 3/4 of the cheese. Scoop 1/8 of the mixture back into each potato skin. Top with remaining cheese. Place potatoes on a baking sheet and bake for 8 minutes. I topped them with some fresh chopped chives from our herb garden.
