Pineapple Whoopie Pies With Cake Mix
When you make whoopie pies with cake mix, it takes a lot less time. And, you can alter the flavor easily simply by changing the type of cake mix you use to make the recipe. If you want pineapple today and chocolate tomorrow, no problem.
Just switch up the mix and the filling ingredients. If you want a vanilla whoopie pie recipe with cake mix, just use vanilla cake mix to start.
Gluten free whoopie pies with cake mix
There’s no reason why you can’t make gluten free whoopie pies with cake mix simply by using a gluten free cake mix. Then, you would just need to make sure that the filling you use is gluten free as well.
This recipe using a cream cheese filling. But, you could also make homemade marshmallow filling or even use Fluff.
Do I need a mold or a cookie-cutter?
No, not at all. You don’t need any sort of mold or special tools to make these whoopie pies with cake mix. You will drop a heaping tablespoon of batter on your cookie sheet.
Then, you’ll take two of these “cookies” to make your whoopie pies. One will be the top and one will be the bottom.
If you want to use a mold, you can get this whoopie pie mold. Using it will ensure that each half is exactly the same shape and size. But, you don’t need to use it if you don’t have one.
How many whoopie pies does a box of cake mix make?
A lot will depend on how large you make each cookie. But this recipe should make about twelve large whoopie pies.
How to apply the filling
All you really need is a spoon and a knife or a spatula. Just add the filling and then spread it around the whoopie pie.
If you want to get fancy, you can pipe it on using a frosting bag. But it’s not necessary. If you do try it, make sure you get the kind with a large whole or the pineapple pieces will get stuck.
What kind of cake mix can I use for the whoopie pies?
You can literally use any kind of cake mix you want. This recipe uses a pineapple cake mix.
But, if you can’t find that, you can use a white or yellow cake mix. Or, change the flavor up entirely and use chocolate, red velvet, or even pumpkin. It’s a great seasonal treat as well if you use holiday flavors.

Ingredients for Cookies
- 1 box pineapple cake mix. Can use yellow if you wish.
- 1⁄2 c. oil
- 1⁄2 c. pineapple juice
- 3 large eggs
Instructions for whoopie pies with cake mix
- Preheat oven to 375 degrees.
- Line cookie sheets with parchment paper.
- In a large bowl, use your mixer to combine cake mix, oil, pineapple juice, and eggs. Mix until
thoroughly combined.
- Drop heaping tablespoons of batter onto a cookie sheet, keeping them about 3 inches apart.
- Bake on center rack of oven approx. 10 min. or until browned.
- Remove from oven and allow to cool in pan on a baking rack.
- After cooled, spread cream filling (recipe follows) heavily on half of the cookies.
- Place remaining cookies on as tops and dust lightly with powdered sugar.

- 1 stick (4 oz.) butter (softened)
- 8-oz. cream cheese (softened)
- 1 t. vanilla extract
- 1 c. powdered sugar + extra for dusting tops.
- 1⁄2 c. crushed pineapple (drained well)
