Quick Easy Healthy Meals
Morning is a super crazy time of day in my house. I work from 6AM to 8AM for a client online. My son needs to be up at 7AM and outside waiting for the school bus at 7:30AM.
My daughter needs to be up at 8AM and off to college by 9AM. You can see there really isn’t a lot of extra time in there for anything but getting people where they need to be.
Most mornings, we do cold cereal for breakfast. It’s not all that exciting and I would love to have a hot cooked breakfast some days – especially in the wintertime.
Occasionally on a day when the kids don’t have school, I decide to make a hot breakfast for everyone.
This Strawberry Banana Barley Bake is one of our favorite quick easy healthy meals. You can change the fruit that you add to it based on what’s in season or what you have to use up.
We have used blueberries, blackberries, peaches, and apples in ours depending on what season it is.
In a pinch, you can put in canned fruit if you don’t have fresh fruit. Canned peaches work quite well in this hot breakfast recipe too.
As with anything that you bake in the oven, it can be a bit of a chore to clean the baking dish. Make sure that you spray the baking dish with non-stick spray. When we were done enjoying this delicious hot breakfast, I cleaned up the dishes using the new Palmolive Fresh Infusions dish liquid available at Walmart.
It did a great job! Palmolive Fresh Infusions is available in Ginger White Tea, Lemon Thyme, and Lime Basil scents. These scents are inspired by nature and really do smell as good as they sound. I received all three scents and have been using the Lime Basil and the Lemon Thyme on my dishes.
My favorite scent is the Lime Basil. I shared the Ginger White Tea scent with a friend. They do a great job on my dishes and the scents are really amazing.

Strawberry Banana Barley Bake
Quick easy healthy meals don’t have to take a long time to prepare. Try this Strawberry Banana Barley Bake for breakfast today.
Ingredients
- 3 cups cooked barley, according to package
- 2 eggs, whisked
- 1/2 tsp cinnamon
- 1/2 cup skim milk
- 3 packets powdered stevia (adjust to your taste)
- 1/4 cup chopped walnuts
- 1/2 cup sliced strawberries
- 1 small banana sliced
Instructions
- Preheat the oven to 350F.
- Spray an 8x8 oven safe casserole with non stick spray.
- Combine all the ingredients except the fruit.
- Fold in 1/4 cup sliced strawberries and all the bananas carefully.
- Top the barley with the remainder of the strawberries.
- Bake for half an hour.
- Serve with yogurt or milk.

I had something similar to your recipe this weekend and I really enjoyed it. Â Usually when I think of a warm breakfast, I want eggs and bacon but this is a much quicker and healthier alternative.

I love the heart shaped ramiken. This looks like a great alternative for breakfast. I get sick of oatmeal all the time. I’m going to look for Palmolive Fresh Infusions the next time I’m shopping. I like using dish soap that smells good.
