Have you been looking for a low carb meatloaf recipe? If you have, you have come to the right place! I love meatloaf but since I follow the Paleo diet and my daughter is gluten intolerant, many traditional meatloaf recipes just don’t work for our family. I’m not giving up one of my families favorite meals though! There are a lot of different low carb ways to prepare meatloaf that your family will love!

Low Carb Meatloaf
So, what makes a meatloaf low carb or not? A low carb recipe will be one that is low in carbohydrates and/or sugar. Traditionally, meatloaf recipes have some sort of bread, cracker, breadcrumb or stuffing added to it to keep it moist. Many also have added sugar from tomato paste, ketchup or barbeque sauce. All of these can raise the carbohydrate count in your favorite meatloaf recipe. While it’s not necessary to completely eliminate these things from your recipe, if you want this recipe to be low carb, you’ll need to keep them to a minimum or find substitutions.
Of course, I recommend you start any meatloaf recipe using Certified Angus Beef® Brand ground beef. Since I’m working in partnership with them, I’ve included one of their yummy meatloaf recipes below for you to try. Make sure that you look for it at your local grocery store.

Low Carb Meatloaf Binder
The big question with making a low carb meatloaf seems to be what can I use as a low carb meatloaf binder. We have always had very good luck using coarsely ground almond flour. There are no carbs since it is simply ground almonds. It’s also gluten-free and paleo so it works for my family. You want to be sure that you get coarsely ground almond flour and not regular almond flour. You may also see it listed as almond meal.
Meatloaf Toppings
If you’re used to adding barbecue sauce or ketchup to the top of your meatloaf, you may want to consider other options. There can be quite a bit of sugar/carbs in barbecue sauce and ketchup. If you feel you need to add these to your meatloaf, look for a Paleo Barbecue Sauce or Paleo Ketchup which will have little to no added sugar. I encourage you to try adding bacon or cheese to your meatloaf instead which are both amazingly delicious. One of our favorite meals is low carb meatloaf with Parmesan cheese. Yum!
