Healthy Dip Recipe for Vegetables
Summer entertaining in my family means cooking outside as much as possible. I certainly don’t want to be stuck inside cooking when everyone else is outside enjoying the summer sun and beautiful weather.
I tend to choose a lot of fresh fruit and vegetable platters rather than making pasta salads and casseroles. .
Of course, when you have fresh vegetable platters, you need to have dip. You just have to.
Unfortunately, some dips are far from healthy and enjoying them too much is a great way to pack on a few extra inches around your hips.
What is the healthiest dip for veggies?
Many dips are mostly sour cream or cream cheese-based and while these are OK in small amounts, they can be high in fat in larger amounts.
This dip recipe combines cannellini beans with Greek yogurt which helps keep it lower in calories and fat than traditional dip recipes.

Tools / equipment
Blender – To get a nice, smooth consistency, you’ll want to process the ingredients in a blender or food processor. You can use either one depending on how much dip you want to make.
Vegetable Platter – While not a strict requirement, you’ll find it much easier to serve cut vegetables and dip at your party with an organized way to keep everything in its place.
I really like the ones with the built-in dip bowl. This one even has a built-in tray for ice to keep everything cold.
Using Progresso canned cannellini beans is a huge time saver in this easy vegetable dip. There is no need to soak or cook dried beans before making the dip.

Sun Dried Tomato and Cannellini Bean Dip

Ingredients
- 1/4 cup sun dried tomatoes (not packed in oil)
- 1 15 ounce can of Progresso cannellini beans (white kidney beans) rinsed and drained
- 1/2 cup Greek yogurt
- 1 tsp minced garlic
- 4 tsp dried parsley
- 1 tbsp freshly chopped chives
- Cayenne pepper to taste
- lots of vegetables for dipping
Instructions
- Put the sun dried tomatoes in a small bowl and pour about 1/2 cup of boiling water over them to cover. Allow them to sit for 5 minutes.
- Drain the water from the tomatoes and chop finely. Set aside.
- Place the beans, yogurt and garlic in a blender or food processor. Process until smooth.
- Remove 1 tsp of the chopped sun dried tomatoes and set aside.
- Add the remaining tomatoes and 3 tsp of parsley to the blender or food processor until mixed.
- Pour into a bowl. Top with 1 tsp of tomatoes and 1 tsp of parsley.
- Serve and enjoy!
