Coming up with a new side dish to serve my family is something I struggle with. I generally don’t buy packages of rice or noodle mixes. I prefer to make my own side dishes that are free of preservatives and artificial ingredients. I recently tried this Creamy Corn & Garlic Risotto for dinner and was impressed by not only how good it was but how easy it was. I included Green Giant SteamCrisp canned corn because SteamCrisp corn is 100% natural and steam cooked in the can at the peak of freshness.

When Green Giant sent me some of their SteamCrisp corn and a few recipes, the Creamy Corn Garlic Risotto looked like something I needed to try.
Creamy Corn Garlic Risotto
Printable Creamy Corn Garlic Risotto recipe
3 cups Progresso reduced-sodium chicken broth
3 cloves garlic, finely chopped
3/4 cup water
1 cup uncooked Arborio or regular medium-grain white rice
2 cans (11 oz each) Green Giant SteamCrisp Niblets whole kernel corn
1/2 cup grated Parmesan cheese
1/3 cup shredded mozzarella cheese
1/2 cup chopped fresh parsley
In 10 inch non-stick skillet, heat 1/3 cup of the broth to boiling. Cook garlic in broth 1 minute, stirring occasionally. Stir in remaining broth, water, rice and corn. Heat to boiling; reduce heat to medium. Cook uncovered 15 to 20 minutes stirring occasionally, until rice is tender and creamy; remove from heat. Stir in cheeses and parsley.

I’ve never had risotto, but this looks and sounds so yummy!
that looks good! I use a lot of rice too and it can get boring by itself after a while!
It could/would be great if not for the thought of using unhealthy, horrible and sodium-filled yucky, disgusting chicken broth!
Use Veggie Broth instead and this dish could be a winner! 🙂
