I’m a huge fan of butterscotch chip cookies but I don’t make them as often as I’d like (or as often as my husband would like) because I hate being tied to the kitchen for long enough to take 5 dozen cookies in and out of the oven, let them cool, etc. I find it’s much easier to make bars that I can simply cut up. This Butterscotch Chip Skillet Pie recipe is like a chocolate chip bar except it’s made in a cast iron skillet and cut into wedges like a pie. This makes it a little bit fancier and could be served with vanilla ice cream like you do with pie. As a note, I used butterscotch chips in my this recipe. The original recipe was for Chocolate Chip Skillet Pie but some un-named person (like my husband) got into the bag of chocolate chips and decided they would be a good snack.
Butterscotch Chip Skillet Pie – Easier than butterscotch chip cookies
1 1/2 cups all purpose flour
1/2 tsp baking powder
1 1/4 cups packed light brown sugar
1/2 cup salted butter, softened
1 tsp vanilla extract
1 egg
1 cup semi-sweet chocolate chips or butterscotch chips
- In a bowl, combine flour and baking powder
- In large bowl, using a stand mixer fitted with paddle attachment, cream together brown sugar and butter until light and fluffy. Add vanilla, mixing well. Add egg, beating until smooth. Add flour mixture and beat just until combined. Fold in chocolate chips.
- Transfer dough to greased 10-inch cast iron skillet. Smooth the top. Bake in preheated 350F oven for 20 to 30 minutes or until puffed and lightly browned. Let cool in pan on a wire rack for 20 to 30 minutes before serving.
This Butterscotch Chip Skillet Pie recipe tastes just like the butterscotch chip cookies my Grandmother used to make me when I was little. They’re delicious and super easy to make. I know the recipe calls for using a stand mixer but I don’t have one so I just used a wooden spoon and mixed it by hand in a bowl. They came out just fine. You can probably also experiment with different flavored chips. Butterscotch was amazing but I bet that peanut butter chips or cinnamon chips would be just as good. This is much easier to make than butterscotch chip cookies and takes no time at all. I found this recipe in The Complete Book of Pies: 200 Recipes from Sweet to Savory.
