Gluten Free Chipotle Taco Bowl with Rice Recipe

This Taco Bowl with Rice is the perfect gluten-free meal for busy families. Some nights, I just do not have time to cook dinner entirely from scratch. I hate it when I don’t plan ahead well enough and end up having to resort to something less than healthy. I experimented over the weekend and came up with a healthy meal that everyone raved about.

Chipotle Taco Bowl with Rice

Have you ever tried a taco bowl with rice before? I know, a lot of the taco bowls I have seen come with tortilla chips instead of rice. But, rice is really a healthier option when it comes to salt content and carbohydrates.  Scroll down for the full, printable recipe.

The new Seeds of Change organic Simmer sauce I used in this recipe come in a variety of flavors. I chose the Taco Roasted Chipotle since it goes perfectly in a taco bowl. But, they also have Sesame Ginger Teriyaki, Sweet & Sour, Mushroom, and Tikka Masala.

Is Seeds of Change gluten free?

Seeds of Change sauces are certified organic and free of artificial colors, flavors, and preservatives. The sauces come in a no mess, easy-to-pour 8 oz. pouch. Just saute your favorite meat, fish or tofu until done, add a Seeds of Change Organic Sauce and simmer for 10 minutes. All Seeds of Change Simmer Sauces at the time of this post do not contain gluten.

Each pouch is intended to be used with one pound of protein. We chose ground beef but you could easily use this with stew meat or beef tips depending on what you have on hand. You could even use ground turkey if you prefer.

What do you put on tacos?

After the meat is cooked and you’ve simmered the sauce, it’s just a matter of assembling the taco bowl with rice. I started with a layer of shredded lettuce to get some extra veggies into everyone’s diet. You can really add anything you want to your taco bow with rice. Just think about what you would normally put on a taco. Try ground beef, salsa, lettuce, cheese, avocado, beans, and onions.

Serving Idea

I created one large taco bowl with rice and then let everyone pick and choose what they wanted in their bowl. I made sure to add in avocado and chopped tomatoes (from our garden) so we had fresh vegetables for our meal.

We also used Colby Jack cheese and kidney beans. Then the kids added more cheese and sour cream to top their bowl. If you’re going grain-free, you can easily not add the rice to your bowl. Or, you can try cauliflower rice.

The Seeds of Change Taco Roasted Chipotle Simmer Sauce had just the right amount of heat for us. It was spicy without being so hot that you go running for a glass of milk.

Easy taco bowl recipe

This is the perfect meal for a busy night. To save time, you can pre-chop the tomatoes and avocado and shred the Colby Jack cheese. All you really need to do is cook the rice and beef.  This meal is just as good cold as it is hot so you can pre-assemble a bowl for anyone who is coming home after dinner. If you’re looking for an easy taco bowl with rice recipe, this is about as easy as it gets.

I know I’ll be buying this again because this taco bowl with recipe was a huge hit and an easy way to create ethnic foods at home. I noticed when I was shopping today that our local Shaws carries the Seeds of Change Organic Simmer Sauces. The price is $3.29 which is very affordable for an organic product.

  2. We have tacos occasionally but my family gets tired of the same way... this would be a great way to change them up a bit and some great flavors too!
