Sweet Cucumber Sandwich Pickles

Everyone has a favorite type of pickle recipe but these sweet pickles are loved by just about everyone.  Of course, you don’t have to have a garden to be able to make these sandwich pickles.

You can pick up cucumbers at your local Farmer’s Market. We visit ours once a week to check out all of the fresh garden produce.

This is an easy sweet pickle recipe to try. To make your pickles with a cool wavy edge like you see on store-bought pickles, you really need this chopper.

I really think it makes the pickles more crunchy.

Can you use regular cucumbers for pickling?

You definitely can use whatever kind of cucumbers you have on hand for this sweet cucumber sandwich pickles recipe. I use whatever I have in the garden or find at our local farmer’s market. If it’s too big, I cut it smaller.

If there are seeds, I remove them and make bread and butter pickles. But, if you want them to fit in your pickle jar, choose a small variety or pick them when they are young. 

Otherwise, cut them in slices and make pickles that way. They still taste delicious whether they are spears or slices.

My preference is to use them when they are young, but I have definitely used larger pickles when that’s all I had.

Best cucumbers for sandwich pickles

Wondering how to choose cucumbers for pickling? A lot depends on the type of pickles you’re making.

If you are making pickle spears or pickling whole pickles, you’ll want to be sure that the pickle fits into your canning jar. If you’ll be slicing the pickles, look for a cucumber that is of average size.  

You won’t want the seeds to be too large or the slices to be too small. If you love pickles, you may want to look for a burpless variety if too many give you gas.

Sweet Cucumber Sandwich Pickles & 13 Delicious Pickle Recipes

Easy Sweet Cucumber Sandwich Pickles recipe

Prep Time 3 hours 40 minutes
Cook Time 10 minutes
Total Time 3 hours 50 minutes

Ingredients

  • 2 pounds cucumbers cut into 1/4 inch slices
  • 1/2 cup canning salt
  • 1 cup brown sugar
  • 3 quarts water, divided
  • 1 cup white sugar
  • 1/2 teaspoon celery seed
  • 5 cups vinegar, divided
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon turmeric

Instructions

  1. Put cucumber slices in a clean pickling container.
  2. Sprinkle salt over cucumbers; add 2 quarts water; let stand 2-3 hours.
  3. Drain. Rinse and drain thoroughly. Discard liquid.
  4. Combine 3 cups vinegar and 3 cups water; bring to a boil.
  5. Add cucumbers, simmer. Cucumbers should not become soft.
  6. Drain well; discarding liquid.
  7. Combine 2 cups vinegar and 1 cup water with remaining ingredients; simmer 10 minutes.
  8. Add drained cucumbers. Bring to a boil.
  9. Pack hot pickles and liquid into hot jars, leaving 1/4 inch head space.
  10. Remove air bubbles. Adjust 2 piece caps.
  11. Process 10 minutes in boiling water canner.
  12. Yield 3 pints.

  1. Hi there. Just made a batch of these pickles but I need some guidance on step #5. How long am I to simmer them in the vinegar/water mixture? I simmered for 5 minutes and am hoping that was good enough.

  2. I didn't grow up with canning or pickling, or a garden for that matter! I am slowly but surely learning how to do these things and this looks like a good one.

  3. I really like sweet pickles, and have been looking for a recipe for sandwich pickles that someone had personal experience with. Do this pickles stay crunchy at all? Or do they get soft after all the heating and processing?
