Once I realized exactly what I was stirring into my fair trade, organic coffee, I stopped, reluctantly. Now, I drink my coffee black with organic stevia but I still miss the taste of the creamy flavored coffee creamers I used to drink.

I decided that the next time I made myself a cup of coffee in my Keurig 2.0, I would figure out how to make a Paleo coffee creamer that was pumpkin spice flavored.

This Paleo coffee creamer has coconut milk as a base.  You should get the full-fat kind because that is what gives the creamer a creamy texture.

It’s not a super sweet coffee creamer so if you are still trying to kick your sugar habit or you don’t follow the Paleo diet and just want a dairy-free coffee creamer, double the amount of maple syrup you use in this recipe.

Ingredients

  • 1 can full fat, organic, unsweetened coconut milk
  • 2 tbsp real Vermont maple syrup
  • 2 tbsp pumpkin puree (not pie filling)
  • 1 tbsp vanilla extract (optional)
  • 2 tsp pumpkin pie spice

Instructions

  1. Put all of the ingredients in a blender & blend.
  2. Good for 4 days in the refrigerator.

  1. I LOVE coffee!! My favorite flavor this time of year is pumpkin spice! I love the idea of using coconut milk as a creamer. I'm not fond of regular creamers, so this is a great alternative!
