So, these cinnamon applesauce muffins are a wonderful way to use up leftover applesauce. In the fall, when we have more apples than we can eat, I often can homemade applesauce. And, of course I generally have more than I can use up. I just don’t sit down and eat a bowl of applesauce.

Now that the kids are grown up, I have more applesauce than I need. Thankfully, this apple sauce spice muffins recipe uses up two cups of applesauce. You can use store-bought applesauce as well if you don’t have homemade.

What type of applesauce should I use?

As I mentioned above, I usually bake with homemade applesauce. But, you can use store-bought applesauce too. You can use either smooth or chunky applesauce. Since you add cinnamon to the recipe, I would avoid using the applesauce with extra cinnamon in it. But, if that’s what you have, it will certainly work. I usually make my applesauce unsweetened. But, you can use sweetened applesauce in this recipe as well. It will really work with any type of applesauce you have on hand.

Can I freeze these apple sauce spice muffins?

Yes, you can definitely freeze this apple sauce spice muffins recipe if you want to. I just put two muffins (no liner) in a freezer bag. Just make sure that the muffins are completely cool to the touch when you freeze them. They should last about three months if you make sure the bag is sealed tightly. 

When you’re ready to eat these apple sauce spice muffins just take them out of the freezer bag and set them on a plate to come to room temperature. Or, you can speed up the process a bit and put them in the microwave for about 15 minutes.

Apple Sauce Spice Muffins Recipe with Chopped Walnuts

Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1 cup (2 sticks) butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups applesauce
  • 1 cup walnuts, chopped (more for topping if desired)

Instructions

  1. Preheat the oven to 350 degrees. Prepare two muffin tins with liners. Spritz liners with nonstick cooking spray.
  2. Whisk together the flour, baking soda, and cinnamon.
  3. With an electric mixer, beat together the butter and sugar until fluffy, about 3 minutes. Add the eggs and vanilla and mix just until blended.
  4. Stir in the applesauce and walnuts (if desired.)
  5. Scoop batter into muffin liners about ¾ full.
  6. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.

Notes

You can leave out the walnuts if you prefer.
