Menu Monday: Recipe for Cherry Apple Granola Pizza with Vanilla Drizzle

One of my favorite high energy breakfasts is granola for not only the amazing taste but the health benefits as well. What … you didn’t know granola had health benefits? It definitely does! Granola is generally a mixture of oats, nuts, seeds and dried fruits. I enjoy mine with skim milk or non-fat yogurt for breakfast many mornings. On winter mornings, the milk can be warmed before you pour it over the granola for a great cold day breakfast.

Because granola is made with whole grain oats, it can play a part in lowering your blood pressure. Oatmeal and oat bran are fantastic sources of dietary fiber which have been proven effective in lowering cholesterol levels and aiding in a healthy digestive tract. High fiber foods help with weight loss because they make you feel full longer. Granola is often made with seeds, nuts and dried fruits. Granola made with walnuts or almonds contains high amounts of Vitamin E which is a potent anti-oxidant.

I was thrilled to be able to sample the ginger snap granola that is loaded with pecans, almonds, pumpkin seeds and coconut mixed with pure molasses! I don’t know about you, but when I think of ginger snap, I think of apples so I decided to put together this amazing Cherry Apple Granola Pizza with Vanilla Drizzle.

 

Cherry Apple Granola Pizza with Vanilla Drizzle

2 cups of all purpose flour
2 1/4 teaspoons of rapid rise yeast
2 tablespoons sugar
3/4 teaspoons salt
2/3 cup warm water (120 to 130 degrees)
3 tablespoons melted butter
1 can (21 oz) apple pie filling
2 tablespoons butter
2 tablespoons brown sugar
1/3 cup dried cherries
2/3 cup Gourmet Orchard’s Ginger Snap Granola

Drizzle

1 cup powdered sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons milk

1. Combine 1 cup flour, undissolved yeast, sugar and salt in large bowl. Add warm water and 3 tablespoons melted butter. Mix until well blended.

2. Add enough extra flour to form a soft dough ball that is slightly sticky.

3. Knead dough on floured board until smooth and elastic (about 4 minutes).

 

4. Put 2 tablespoons butter, brown sugar and dried cherries into small pan. Cooking until boiling and boil one minute. Mix cherry mixture with pie filling.

5. With floured hands, gently press dough to fill a well greased pizza pan. Create an edge around the edge of the pan by pinching gently.

6. Spread pie filling over crust and bake at 450F for 6 minutes. Remove from the oven and sprinkle with granola.

7. Put pizza back in the oven and cook for 6-9 more minutes until crust is browned and granola is slightly browned. Cool for 5 minutes.

8. Make the vanilla drizzle in a small bowl. Drizzle of pizza and serve.

This pizza is absolutely amazing. It works well for a healthy breakfast, brunch or lunch or just a yummy snack!  Everyone raved about the taste.  I love using the Gourmet Orchards Ginger Snap Granola as a topping.  The ginger is just the perfect accompaniment to the apples and cherries.  It reminds me of a delicious apple pie with a bit more attitude!  Gourmet Orchards granola can be purchased in one pound bags for $7.99 to $8.99 depending on the variety.  For those watching their sugar, they even have versions sweetened with agave!

  2. That sounds SO good. I love all the granola flavors, too. I think the combination of ingredients in granola is terrific.
    You need to come up with a frozen version of your pizza! I hardly ever make time to cook these days, unfortunately.

  7. I never ever would have thought to make a pizza like that, it sounds delicious. I love granola too. I've become obsessed with parfaits lately and you simply cannot have a parfait without granola, I also love it on oatmeal, but now I totally want to try that pizza.

    Wow! Granola, I love granola, my old time favorite. being lactose intolerant I eat my granola with apple coconut or rice milk, yum!
