Like most moms, I have a collection of recipes that are quick and easy to prepare. I save them for my busiest nights and keep the ingredients on hand just in case. You never know when something unexpected will come up like an emergency trip to the doctor’s office with your son.

I really love cooking from scratch but there are nights that I need to take a few shortcuts to save my sanity and get everyone fed before 8:30 at night. On those nights, I rely on packaged foods as the base for my meal and add in fresh ingredients to make it a real homemade meal.

Is it better to make macaroni and cheese with water or milk?

When it comes to crafting a creamy, delicious bowl of macaroni and cheese, using milk instead of water can make a significant difference. Milk adds a richness and depth of flavor that water simply cannot achieve.

It also aids in creating a thick, velvety cheese sauce that coats the pasta perfectly. So, for a tastier and more indulgent macaroni and cheese, opting for milk is the better choice.

Gluten free mac and cheese

When Sarah was diagnosed as gluten intolerant, it really made me think about the foods I was cooking.  I started looking more closely at the ingredients in what I bought and I started getting her involved in the kitchen so she understood what to look for.  

I started with explaining that gluten was something that was found in many grains but especially in wheat and that it was responsible for making bread have that elastic, chewy texture.  And, I also explained that it was a combination of two different proteins and that it could make some people sick (including her).

We went through the foods in the kitchen when we made dinner and I explained to her what the best choices were for someone who was gluten intolerant. Ingredients

  • 1 box of Horizon Organic Gluten Free Mac & Cheese
  • 1/4 cup of milk
  • 2 tbsp unsalted butter
  • 1 pkg fully cooked chicken sausage, sliced into coins
  • 2 handfuls of Earthbound Farm Organic fresh baby spinach

Instructions

  1. Cook the pasta from the Horizon Gluten Free Mac & Cheese.
  2. While it's cooking, heat the sausage in a separate pan.
  3. Drain the pasta when it's done and return to the pan. Add the milk, unsalted butter and cheese packet.
  4. Toss in 2 handfuls of Earthbound Farm Organic fresh baby spinach. The heat from the pasta will wilt the spinach.
  5. Add the sausage and stir.
