Salsa is an Italian and Spanish term that means sauce. When we hear the word, we think of Picante de Gallo which is a sauce that contains chunks of vegetables and/or fruits.

You can use this in a variety of Mexican and Spanish dishes or enjoy a big bowl to dip. But, whatever you do with it, this Vitamix salsa recipe is the best recipe I’ve tried.

It only takes about 10 minutes to make this easy vegetable dish. But, for the best taste, I recommend refrigerating for at least an hour so the flavors combine.

Tools / equipment needed for this recipe

If you don’t have a Vitamix, you can use another food processor or a blender provided it’s strong enough to blend all of the ingredients.

  • Vitamix (or another blender or food processor)

If you don’t have any type of blender or food processor, you can still make this. But, you will need to chop everything by hand instead.

What should I serve this with?

We usually go for tortilla chips when we serve this. But, you can easily use pita chips or melba rounds if you want something a little bit different.

You can make your own homemade tortilla chips or you can buy your favorite brand from the store.

Canned or fresh tomatoes?

If it’s the middle of summer and you want to use up what you have in the garden, you can make this dish with fresh tomatoes. Otherwise, the canned variety will work just fine.

How much does this recipe make?

This will make 3 or 4 jars. So, if that’s too much for you to eat in one sitting, you can easily cut the ingredients in half and make a smaller portion. 

It will stay good in the refrigerator in a jar with a tightly fitting lid for up to one week. To keep it longer than that, you can freeze it.

Can you freeze salsa?

Yes, you can freeze this blender salsa recipe if you have too much. But, be aware that tomatoes don’t generally freeze all that well so you might see some loss in texture.

Just place this in a heavy-duty freezer bag and use it within 6 months.

Can I leave out the cilantro?

Cilantro is an acquired taste and not everyone appreciates it. If you don’t like it, you can definitely leave it out. And, you can substitute fresh parsley if you prefer.

How can I make this hotter or milder?

It’s so simple to customize the heat level in this Vitamix recipe. All you need to do is to add more or fewer jalapenos (and either omit the seeds or keep them all in).

For a mild version, you can leave the jalapenos out completely. Try adding green bell peppers for visual interest instead.

Remember that it’s easy to add more hot peppers. But, it’s a lot more difficult to add less. Start slowly.

What else can I use salsa in?

If you want to use this in another dish, there are lots that you can choose from. Salsa is a staple of many Mexican recipes.

Taco de harina con carne y salsa is one of our favorite Mexican recipes. Basically, it’s a burrito with meat and salsa and it’s delicious with this recipe.

And, you can always add a scoop or two to my Chipotle Taco Bowl with Rice. Everything tastes better with a few spoonfuls of pico de gallo.

Ingredients

  • 2 (28 ounce) cans diced tomatoes
  • 1 (7 ounce) can diced green chilies
  • ½ cup fresh cilantro leaves
  • ¼ cup coarsely chopped onion
  • 1 clove garlic, minced
  • 1 jalapeno, seeded for mild or with seeds for medium
  • ¼ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon preferred sweetener
  • 1 lime, juiced

Instructions

  1. Place all ingredients in a Vitamix (or blender or food processor) 
  2. Cover and pulse until the salsa reaches your desired consistency. 
  3. Taste and adjust salt if needed.
  4. Refrigerate one hour to overnight before serving.
  5. Store in an airtight container in the refrigerator for up to 7 days.

  3. Thanks! I pinned the Instant Pot Salsa, which led me to a whole chicken made in the Instant Pot, another recipe I want to try. I have some Ralph freebies loaded on my card to get this weekend which include free organic tortilla chips, a can of refried beans, a Goodness Knows snack bar, and a kombucha drink--the makings of a nice meal!
