I love muffins, but they’re usually loaded with sugar and fat. These lime zucchini muffins are the perfect solution to my muffin craving! They’re healthy enough for breakfast or a snack, but also delicious enough that you can serve them at brunch on Sunday morning.

These easy gluten-free courgette and lime muffins have far less sugar than traditional muffins! With only a few ingredients, it’s easy to make these lightened-up treats in your own kitchen. I’m a huge fan of stevia because it has no calories and is all-natural. Stevia can be used in place of sugar without any negative impacts on your health or weight, but I’ve always found baking with it to be frustrating – the results never seem quite right!

Choose unsweetened applesauce instead of oil. Applesauce is a delicious and nutritious substitute for oil in baked goods. It’s much healthier because it has no fat, no cholesterol, and only 4 calories per serving! Also, you can use any flavor or variety you like. 

Include fiber! When you are making muffins, reach for whole-grain flours and add plenty of fiber-rich ingredients like fruits and veggies. Fiber helps keep your blood sugar level by slowing down digestion. This is important because if your blood sugar levels are high, you will crash and feel hungry again soon after eating.

Add protein! Protein not only helps to maintain muscle, but it is also filling-so it keeps you feeling full longer! Whether you add Greek yogurt or eggs to your muffins or even a scoop of whey protein powder, adding additional protein will help you feel satisfied and energized for hours to come!

  • Change the flavor slightly by using fruit-flavored yogurt instead of plain yogurt.
  • Use lemon or orange zest instead of lime.
  • Use almond flavoring instead of vanilla flavoring.
  • Add chopped nuts or dried fruits.

Lime Zucchini Muffins Recipe

Ingredients

  • 1 cup oil
  • ¼ cup greek yogurt (plain)
  • 2 Tbsp lime juice
  • 2 eggs
  • 3/4 cups Domino Sugar and Stevia Blend or 1 1/2 cups granulated sugar
  • 3 cups regular or gluten free flour
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • 2 tsp lime zest
  • 2 cup shredded zucchini (pressed slightly to get some water out)
  • 1 tsp vanilla

Glaze (if desired):

  • ⅓ cup powdered sugar
  • 2 tsp lime juice

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, combine flour, baking soda, baking powder, sugar, and lime zest. 
  3. Add oil, greek yogurt, eggs, lime juice, and vanilla.  Mix well.
  4. Stir in shredded zucchini.
  5. Divide batter evenly between either regular or mini muffin tins.
  6. Bake for approximately 20-22 minutes for mini muffins OR 30 minutes for regular muffins. Let the muffins cool before removing them from the pan.
  7. If you would like to add a glaze.  Stir together powdered sugar and lime juice, until creamy.  Drizzle on top, once the muffins have cooled.

  6. I will try anything that Ellen dreams up.  SHe is a Muffin Ninja.  I like to try recipes with Stevia because it is a natural sweetner.
