With spring only a few days away (I hope), I know that I will be eating a lot more salads.  Nothing tastes better than fresh lettuce from my garden and adding a vinaigrette to it just makes it taste even better.

This herb infused balsamic vinegar recipe can be used on your salad or even drizzled over new potatoes before you grill them.   I’m enjoying it over a caprese salad today.

Herb Infused Balsamic Vinegar Recipe

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 7 to 10 springs of fresh thyme
  • 1 cup of balsamic vinegar

Instructions

  1. Wash the thyme & dry it by placing it between two sheets of paper towels and patting gently.
  2. In a small saucepan, put the balsamic vinegar and the fresh thyme. Bring to simmer over medium heat.
  3. Reduce heat to low and simmer covered for 10 minutes.
  4. Remove from heat and let sit, covered, for 1 to 3 hours to infuse flavors.
  5. Strain through cheesecloth or fine sieve into sterilized bottle.
  6. Refrigerate for up to 6 months.

  2. Oh my gosh, delicious! I love balsamic so much. I'm so going to have to do this because I love having salads and creating unique flavors, but I hate the additional calories that comes with using store-bought dressings. Great idea.

  3. I make my own salad dressings, mayo, mustard, ketchup, sriracha and more.  I've even made a homemade marmite substitute.  This looks great.  Think I'll try it when I have some fresh herbs.   Which, given the VT forecast, will be quite some time :(

  4. I make a lot of my own salad dressings. There is something about the flavor of balsamic vinegar that makes everything taste better. Your salad looks great and I bet in VT you are really hoping spring comes soon!

  5. The only condiment I have ever made is my own ranch dressing. This sounds super tasty, though, and I would love to try it!!!

    • The herb infused balsamic vinegar is definitely OK for paleo but not the mozzarella cheese in the Caprese salad.

  11. Dan loves a good vinaigrette and balsamic vinegar. Definitely pinning so we can try this. It's so hard to find a good salad dressing at the store that doesn't have a bunch of stuff we don't want in it.:)
