Looking for healthy toppings for English muffins you can have for lunch? How about these Mediterranean Hummus Bites:

  • 3/4 cup prepared red pepper hummus (See Tip below)
  • 4 BAYS English Muffins, any variety, split, toasted
  • 3/4 cup crumbled feta cheese
  • 1/2 cup pitted Kalamata olives, chopped
  • 1/3 cup julienned sun-dried tomatoes in olive oil, chopped
  • 1/4 cup chopped cucumber
  • Two tablespoons chopped parsley, optional

Instructions

Spread hummus evenly over English muffin halves; top with cheese, olives, sun-dried tomatoes, cucumber, and parsley. To serve, cut each half into four wedges.

Serves: 16 (2 wedges each)

How to Make Homemade Red Pepper Hummus:

  • One can (15 oz.) garbanzo beans, drained
  • ½ cup drained roasted red pepper pieces, cut into chunks
  • A ¼ cup tahini (sesame seed paste)
  • ¼ cup fresh lemon juice
  • Two tablespoons olive oil
  • Two cloves garlic
  • Salt and ground black pepper to taste

Place ingredients in a food processor; process until mixture is smooth, scraping bowl as needed. Hummus stores well refrigerated in an air-tight container for up to 3 days. Makes 1-1/2 cups.

  5. I saw the article about aging and wrinkles. I've been on the same exact road! I've tried a few tings but they are so expensive I can't afford any of the options, its depressing. I'm living in A nursing faciliity right now & doing therapy to TRY to be able to walk again, if it goes well, I get to go home. My point is, I feel so overwhelmed & stressed to the max, and it makes me feel really really old! Eye lines, smile lines, forehead lines, even when I sleep i wake up with lines at the bottom of my cheeks! Its like fat wrinkles! WHAT? I never had those?! I have to smooth them out every single morning. Thanks for liistening to my rant

  7. I loaded a free Ralph's coupon for English muffins the other day. I'm going to pair it with the free TGIF chicken appetizers coupon I also loaded. Both are items I don't regularly eat but I don't turn down free food, lol. The veggies with avocado slices sounds like a great topping for the muffins. My mom also regularly had English muffins for us, but only toasted with butter. They would make a sturdy base for a mini pizza for sure.
